Cole Slaw - Donna Hay WWDH

Here we are again and this week Gaye chose our dish, cole slaw.  I have never made a cole slaw like this.  I left out the capers and since I don't use raw eggs, I mixed a bit of may with the white wine vinegar.  What impressed me the most was the radishes.  They seemed out of place but when I mixed them into the cabbage they blended beautifully.  Certainly, the add a nice color and texture to the slaw.  I also did not make cabbage wedges since I already had, in the refrigerator, a bag of shredded cabbage. I served this with chicken burgers and potato kugel and this rounded it off and brought in the healthy side of the meal. This recipe came from Modern Classics 1 and is found on page 46.  I have two of Donna's books and a list of others, I want to own.  There are many good recipes on her site so anyone can cook from her collection.  We welcome anyone who would like to join us.  Let us know and we will send you the list of recipes...

Greens and Radish Salad

I wanted a pretty salad for dinner, tonight, besides one, we like.  I decided thin sliced radishes would do the trick as well as add a bite to the greens.  In reality, this is your basic salad but I replaced tomato with radish and added celery and carrots.  I was going to add cheese but we had a cheesy dinner. Greens and Radish Salad Ingredients: 1 head of romaine lettuce 5 radishes sliced very thin (used mandolin) 1 carrot, sliced very thin 1 stalk celery, sliced very thin Dressing: (adapted from Meatless Meals for Meat Eaters) Go see Miriam for her other recipes here. 1/8 cup grapeseed oil (use any one of choosing) 2 tablespoons soy sauce 1 teaspoon sesame oil 1 tablespoon honey 1 1/2 teaspoons white wine vinegar 1 teaspoon sugar 1 teaspoon orange juice 1 teaspoon minced onion 1/4 teaspoon ground ginger 1/8 teaspoon salt Combine all the ingredients in a bowl and whisk until, there is a smooth dressing.  Pour over salad and mix gently.

Avocado-Carrot-Radish Pasta Salad with Feta

A new blog to me is Ewe Creek Cottag e. I put it in the category of charming blogs. Not only did I find the site but also a recipe, I decided to make for lunch today. The main ingredients of the recipe are pasta, cucumber, zucchini, summer squash and goat cheese. Now take a look at the title of this recipe. Yep, that is the result of not having what I thought, I had, on hand. It is a comedy of errors. Get the cuke (Sure I had a long English cucumber, just waiting for me.) Not any more. Get the zucchini - Oops, I forgot, I used it in another dish. Summer squash, I knew I did not have any. Goat cheese - yes it is in the refrigerator, sealed closed. How could I use it when I have an opened package of feta? Wonderful salad at the Ewe Creek Cottage but only the dressing sort of matches the original recipe, which I still want to make.
