Hearty Breakfast Casserole

  I have to admit that this month's food choice threw me.  Croutons.  What do I do with croutons.  I never use croutons, except to throw them into a salad.  With hubby having celiac, I tend to skip bread products or bread creations.  Either, I have to make it first or buy it and it is expensive.  After much thought and more perusing through cookbooks and the Internet, I decided to make a breakfast dish.  I figured a little cheese, eggs and some seasoning and I would have something. Then, I found a recipe on Allrecipes .com. I made it for a 2:00 PM breakfast on Sunday.  No, I did not sleep until then.  I started working on plans for my fifth grade and was too busy to eat.    If I want to diet, all I have to do is start a project, whether cleaning a closet, or leaning something new or making plans for school or even cooking.  I get absorbed and never a thought goes to tempting food. I am a breakfast for dinner, lunch and brunch person and would be happy, eating omelets, pancakes, French toast and other breakfast treats, three times a day.  That would mean, missing out on too many other good foods, so I don't do it, but I certainly could. For lunch today, we had cottage cheese pancakes and I integrated black cherry jelly into the batter. That made delicious pancakes even better and we finished them, quickly with satisfaction. Pancakes are easy to make and most of my cottage cheese recipes are similar as is this one from Martha.  I think, I have better recipes and have to  locate them and compare. Blueberry Cornmeal Pancakes

My favorite dinners are what usually pass for breakfasts, eggs, pancakes, French toast, muffins and coffee cake.  OK, I don't make coffee cake for dinner. The other night was what I call, a tired night.  A tired night for me, usually means, it is a challenge to boil eggs.  All I want to do, is climb into bed and close my eyes, even just for a half an hour.  A tired night means, even if I get that nap in, I don't want to cook.  Cooking time has passed and I want to move on.  I could go without eating but hubby couldn't.  In all fairness to him, when I feel this way, he either offers to bring in dinner or to make pasta and cheese (this is not mac and cheese, as we know it). I, get pleasure out of cooking for my husband so I try to avoid these situations.  Pancakes seem to be the easiest, other than eggs, to make quickly and quietly.  With pancakes, you can get away with the easiest recipe and put some fruit or syrup on top, and it is goo...

Baked French Toast - Club Baked

I grew up, eating French Toast but my French toast was cooked in a pan and was rather plain.  It was good but since then, I have had stuffed French toast and now this Baked French Toast with fruit. We are lucky gals since Julie selected this great dish from Baked Explorations: Classic American Desserts Reinvented - Hardcover (Oct. 1, 2010) by Matt Lewis, Renato Poliafito  for Club Baked.   The recipe can be found on her blog, A Little Bit of Everything. I followed the recipe, as written, except for the delicious fruit on top.  I used peaches and they were just right for the toast.  Instead of frying, the toast is easily popped into the oven.  I had a half a loaf of challah around so I used it and it does make good French Toast. Breakfast Loaf

We are baking loaves for a really interesting event - Handmade loaves (a seasonal blogging event).  This is the brainchild of Di's Kitchen Notebook .  You still have time to get in your loaf, in the next few days.   There will also be a Virtual Cookie Exchange in December. I had loads of plans for unusual loaves but the Jewish holidays took precedence and I did not have time to fool around with recipes. This Breakfast bread sounds like a good one to share. Stuffed French Toast

I have been yearning for cinnamon for weeks.  I even bought (shocking) ready made cinnamon rugelach.  I did not even have to eat them to be happy.  The aroma saturated the area and I just sat there, sniffing.  Heavenly. Anything, I have baked has had cinnamon in it, if at all possible, for weeks.  I dream about cinnamon, talk about cinnamon and finally, this morning, I gave in and made myself stuffed French Toast with cinnamon in the filling and in the batter.  Lots of cinnamon....... Delicious is an understatement for this delightful dish. Why I Started This Blog and Intro to Quick and Easy

Hi, this is Chaya from Comfy Cook and My Sweet and Savory.  You may ask, what am I doing here as Bizzy.  Good question with a good answer. Allow me to introduce the purpose of this blog.  We all lead busy or bizzy lives and if you are like me, squeezing everything important into it, is not the easiest challenge, we have met, along our paths.  As a grandmother, I can tell you that time really goes faster as you age ( seems to anyway) . To prove this, my first grandson plans to marry in April.  Yep, my precious grandson, son of my oldest daughter, the one I saw born and held right after birth - yep that one.  This guy is a fantastic human being.  He knows what he wants and is strong in what he does.  He is marrying the most lovely young lady and we are every so happy.  We welcome S into the family with open arms.
