Brownie Mix Cookies - Yum

There are no words to write about this cookie.   Just look at it.  It is easy to make since it starts with a mix (no, I don't use mixes........ except this time).  It turned out to be the yummiest cookie and I think I will make it again, very soon......like tomorrow. And YES, I had grandchildren over today.  Who else can I bake chocolate for? Chocolate Chip Brownie Cookie Ingredients: 1 package. Duncan Hines fudge brownie mix 2 eggs 1/4 cup oil 1 3/4 cup semi-sweet chocolate pieces Method: Preheat oven to 350 degrees. Cover cookie sheets with parchment paper. In large bowl combine the brownie mix, eggs and oil. Beat with a spoon about 50 strokes. Stir in the chocolate pieces. Drop by rounded teaspoonfuls 2 inches apart onto cookie sheets.  I use a cookie scoop. Bake at 350 degrees for 8 to 10 minutes. Cookies are soft to the touch. Chocolate Truffle Cookies

I was disappointed with the look of my last chocolate cookie although it tasted great.  I decided to try another recipe for some of my grandchildren.  I made a chocolate truffle cookie and so far, I have only tasted one while it was warm.  It was unbelievable both texture wise and flavor. Chocolate Truffle Cookies (allrecipes.com) Ingredients: 4 (1 ounce) squares, unsweetened chocolate, chopped 1 cup semisweet chocolate chips 6 tablespoons butter 3 eggs 1 cup white sugar 1 1/2 teaspoons pure vanilla extract  1/2 cup gluten-free flour mixture 2 tablespoons unsweetened cocoa powder 1/4 teaspoon baking powder 1/4 teaspoon salt 1 cup semisweet chocolate chips Method: In the microwave, melt unsweetened chocolate, 1 cup of the chocolate chips, and the butter stirring occasionally until smooth.  Remove from heat and set aside to cool.  In a large bowl, whip eggs and sugar until...

We get a weekly magazine with some terrific recipes in it.  I fell for this fudge pie and even though mine does not look as good as the picture, it tastes as it good as I thought it would be.  The magazine is Whisk, the food segment of Ami magazine.  Cookie Dough Fudge Pie Ingredients: 1 graham cracker pie crust Cookie dough layer: 1/4 c. oil 1/4 c. brown sugar 2 Tbsp sugar 1/2 tsp. vanilla extract 1 Tbsp milk or milk substitute 1/2 c. flour 1/3 c. mini chocolate chips Fudge layer: 1 c. oil 1 c. sugar 1 tsp vanilla extract 1/4 tsp baking powder 2 eggs 1/2 c. flour 1/3 c. unsweetened cocoa powder  Method: Preheat oven to 350 degrees F. Cookie dough layer. Using electric mixer, beat oil and sugars, add vanilla, milk and  flour until smooth.  Add chocolate chips and stir. My grandchildren were over and it was breakfast time.  I decided, we would have fun and make something together.  Grandchildren open new doors.  They are not simply children of children. Our love for them and theirs for us is more overt, even than our children, because we do not live with them so a good dose of obvious love is out there, whenever we get together. Planning activities with them is fun and simple.  It does not have to be a big deal but sometimes it is.  My husband loves to take them on walks.  There is something about those walks that opens up many doors.  I remember walking with one of my granddaughters and learning the times tables.  We have such fond memories of multiplication.  Weird but wonderful. I had three daughters to cook with. Rich Chocolate Chip Coffee Cake

For the holidays, I get my baking in and when in a hurry and baking, Taste of Home is a good place to turn to.  I always find something easy to make and successful at the end.  This is no exception. I made two smaller cakes and cut one into two layers and filled it with a ready-made caramel.  That was delicious. Chocolate Chip Wontons - compliments of Wonton Warrior

Wonton Warrior has been a busy person, dictating to us, what kind of wontons to make and what other tricks there are for the use of wontons.  For example, sprinkle with a  little cinnamon and sugar and bake and you have delicate cookies. When he said the word, chocolate, both Bizzy and I jumped for joy.  Chocolate can't be beat.  I found this recipe on Yummily and it has the most endearing name - Ridiculously Easy 4-Ingredient Chocolate Chip Wontons.  I made half the recipe and  should have made more. I served these at the family barbecue and the first reaction of people was "Chocolate in a wonton?"  That makes sense since, wontons are more often found in soup than as a dessert.  I made them with Tofutti cream cheese but I recommend that you use real cream cheese. Passover Chocolate Chip Cookies

On the bottom of this post is my first batch of these cookies.  I call them Disaster Cookies.  They are a sweet disaster since all the pieces are being eaten, as I type.  Chocolate Chip Cookies This recipe is from Mrs. Rikva Thumim of Golders Green, London. It is posted in Tamar Ansh’s book. Makes about 45 cookies – or so. Hard to tell as they get eaten very quickly! (I made four cookie sheets which includes those disaster cookies.) Ingredients: 2 cups sugar 2 eggs 1 cup oil 2 packets, about 2 T. vanilla sugar 3  cups very finely ground almonds – (almost flour consistency) 1 cup potato starch 1 cup = 10 oz. chocolate chips Method: Preheat the oven to 350°F Cream together the sugar, eggs, and oil. I mentioned copycat recipes, yesterday.  Here is an old recipe, I made on Comfy Cook that we liked a lot.  Of course, Bizzy is going to select a cookie and why not that famous Neiman Marcus recipe. There is much conflicting discussion about this cookie but all I know is that it tastes good.  I am a big fan of brown sugar in chocolate chip cookies.  I think that the brown sugar puts the cookie over the top, that and all the chocolate inside.  Take a look.  .  Here is the recipe, I used,  although there are a variety out there.  This is on CD Kitchen Neiman Marcus  Cookie  - Copycat  The only change, I made, was to sub margarine for the butter.
