Chocolate Ganache Mini Bundts - Ina's Garden

We decided to have a Wild Card for this week's Ina Garden. Since my granddaughter will be celebrating her birthday, at our home, I decided to make mini bundts. She is only turning one so small cakes sounds appropriate. I have decorated each of them differently. Since I had the Marshmallow Fluff out for brownies, I was making, I decided to use that with the chocolate ganache to make it even more festive. I had fun with different sprinkles and designs. Chocolate Ganache Mini Bundts (adapted) Ingredients: 7 1/2 ounces oil, at room temperature
1 cup sugar
4 extra-large eggs, at room temperature
16 fluid ounces chocolate syrup
1 tablespoon pure vanilla extract
1 cup all purpose flour
For the ganache:
1/2 cup heavy cream
8 ounces good chocolate chips (Semi-sweet)
1 teaspoon instant coffee granules
