Lentils, Lemon and Yogurt Soup - Donna Hay

Yeah, I am finally back with my Donna Hay Group, WWDH,  It feels good and the soup we made, this week, was delicious.  I was hesitant with the combo, Lentils, Lemon and Yogurt Soup with Spinach but I jumped right in and was rewarded with a creamy and warming soup. This was yet another easy soup from Donna and with the addition of the spinach, it went right to the top of the list. Gaye selected this recipe and personally, I think, she has great taste.  Thanks Gaye. Recipe Box # 32 - Classic Lentil Soup

 My husband loves soup, in the winter, to put it mildly.  Other than nut cake, he asks only for soup, any kind of soup.  I love to make soup so this is truly a labor of love.   I rarely cook with lentil and wasn't sure how well it would go over with hubby.  Indeed, it was a great success.   I added t he turkey to the recipe and in my opinion, this turned it, into a " souper soup".   Classic Lentil Soup  - adapted fr om Mark Bittman Makes: 4 servings   I ngredients: 1 cup dried lentils, washed and picked over 1 bay leaf Several sprigs fresh thyme or a few pinches dried 1 carrot, thin sliced 1 celery stalk, cut into 1/2-inch dice 4 cups vegetable stock or water, or more as needed Salt and freshly ground black pepper 2 tablespoons extra virgin olive oil 1 onion, chopped 1 teaspoon minced garlic 1 1/2 cups sli vered tur key  Met...

Lentils and Red Stuff Before I discovered that canned lentils had gluten in them, I made this dish which was yummy.  Now, I use fresh lentils to avoid the health issue.  Let me add, I am not sure that all cans of lentils have gluten.  I used Eden, my favorite brand for anything they make except lentils. Eden is low salt or no salt which we are relatively careful about.  The difference between their canned beans and other brands is huge in salt content.    This makes a different kind of salad or it can be blended together to make a dip, adding a little liquid from the tomatoes or roast peppers. Ingredients: 1 can lentils 1 can diced tomatoes with one tablespoon of liquid 2 bottled roast peppers, sliced 1/2 teaspoon sugar or honey  seasoning of choice (garlic, basic, oregano) Mix  all of the ingredients together.   Add the spice of choice.  I use what we are growing, at the time. Lentil Patties

I go on cooking sprees. This afternoon, I pulled out the quinoa and the orange lentils.  I have this wonderful book which seems to be sitting around forever.  I pick it up, occasionally, get excited about the recipes and put it down without making anything.  There is no rationale behind this.  I really have wanted to use this book.  I bet, I have had it for twenty years.  It is called 365 Ways to Cook Vegetarian.  If you should own it, take a look and you will find a gold mine.  It is part of a series - 365 Ways To.... I think, I didn't follow through with the recipes because I only became a real veggie lover, recently.  The first time, I have had a lentil, knowingly (not in a restaurant or someone's home) was within the past two years.  The book has some interesting lentil recipes.
