Cheesy Cornbread - Martha

I made this quite a while ago and set it up to be blogged.  Unfortunately, I don't remember the details of making it.  I know I used gluten free flour but I do think, I followed this pretty much to the letter.  The addition of cheese to cornbread is yummy and a real treat.  I do have to make this again, soon and if I find any changes, I will have to get back to you.  This is a bread I could manage to devour on a regular basis. You see how crumbly, this is, in the photo and I am doubting, if you made this with regular AP flour, you would have so many crumbs.  I find, in general, my cakes are more crumbly than the ones, I used to make with AP flour. Blueberry Cornmeal Pancakes

My favorite dinners are what usually pass for breakfasts, eggs, pancakes, French toast, muffins and coffee cake.  OK, I don't make coffee cake for dinner. The other night was what I call, a tired night.  A tired night for me, usually means, it is a challenge to boil eggs.  All I want to do, is climb into bed and close my eyes, even just for a half an hour.  A tired night means, even if I get that nap in, I don't want to cook.  Cooking time has passed and I want to move on.  I could go without eating but hubby couldn't.  In all fairness to him, when I feel this way, he either offers to bring in dinner or to make pasta and cheese (this is not mac and cheese, as we know it). I, get pleasure out of cooking for my husband so I try to avoid these situations.  Pancakes seem to be the easiest, other than eggs, to make quickly and quietly.  With pancakes, you can get away with the easiest recipe and put some fruit or syrup on top, and it is goo...

What is Underneath?

Have you ever been presented with some food that you can't see?  All you recognize is the mashed potatoes, pie crust or corn bread topping.  As you plunge in to unearth, hidden treasure, how do you react?  Would you rather know ahead of time?  Do you like being kept in the dark? I didn't mean to hide the simmering meat and vegetables under the corn meal crust.  In fact, I planned to drop it in globs but I had enough to completely cover the rest of the food. I, of course knew what was below the rather boring crust but I did not expect to be overcome with a delicious aroma.  Aroma, to me, means brown sugar, cinnamon, apples baking.  It does not signify chopped meat and peppers. This time, it completely fooled me.   It smelled so good, I could hardly wait to taste the richness, awaiting me.  Whatever the reason, these flavors blended beautifully. What is underneath?
