Spinach and Cheese Strata - Martha Stewart

I think, I mentioned before that in the evening after the Sabbath, we have a special meal.  It is not a big one, nor is it a fancy one but it is good eating.  Tonight, I made a spinach and cheese strata based on a recipe from Martha Stewart. We have been eating spinach daily, not with any intent, but with lots of love.  As I search for something that appeals to me, I keep being pulled in by spinach recipes.  On the Sabbath, I had both a main dish with spinach and a delightful salad that I concocted with the extra spinach from that dish. During the past week, I also served a few dishes with spinach.  I have a feeling that this is not a vegetable that I will easily tire of.  That may be because it adapts to so many different foods.  It is good plain or with other vegetables, it is great with dairy and I love it with fish or meat.   I think Popeye had something when he touted how his muscles came from all the spinach he ate. ...

Black Cherry Cottage Cheese Pancakes for Meatless Mondays

I am a breakfast for dinner, lunch and brunch person and would be happy, eating omelets, pancakes, French toast and other breakfast treats, three times a day.  That would mean, missing out on too many other good foods, so I don't do it, but I certainly could. For lunch today, we had cottage cheese pancakes and I integrated black cherry jelly into the batter. That made delicious pancakes even better and we finished them, quickly with satisfaction. Pancakes are easy to make and most of my cottage cheese recipes are similar as is this one from Martha.  I think, I have better recipes and have to  locate them and compare. Candy Corn Sugar Cookies - Martha

I am guessing that when you hear candy corn cookies, you picture cookies, shaped and colored to look like candy corn.  They are adorable and I am sure take more work than I put into this easy recipe.  This is a quick, easy and delicious recipe.  You can make these in chocolate and plain.  I stayed away from the chocolate and made another recipe for them that was chocolate. I made these for my class and I don't put a lot of effort in what I bake for them.  I would not consider them my most discerning judges.  It is usually, when I take a plate of goodies out, the cheers come.  This class is more picky than others, and don't even like peanut butter in cookies.  Mint and coconut are out, as well.  Even marshmallow is considered great.  This makes it easy for me.  They will get thumbprint cookies, chocolate and sugar cookies and some cake.
