Gingered Orange Muffins - Muffin Mondays

Muffin Recipes is the name of a site which, as you can guess, has muffin recipes. There were several that interested me and so far, I have made this Gingered Orange Muffin which had a snappy citrus flavor. Some of the other recipes that interest me are the following. Muffin Mondays - Cheesy Muffins

For my brunch, I made two kinds of muffins, one with Cheddar cheese and one with orange. I liked the orange better and hubby preferred the cheese. Our company ate both but I think found the orange their favorite. Cheesy Muffins adapted from Allrecipes.com Ingredients: 2 cups gluten-free flour mixture 1 cup shredded Cheddar cheese 2 tablespoons sugar 3 teaspoons baking powder 1/4 teaspoon salt 1/8 teaspoon lemon-pepper seasoning 1 egg 1 cup milk 1/4 cup Canola oil 1/4 cup red pepper, chopped small Method: In a large bowl, combine the flour, cheese, sugar, baking powder, salt and lemon pepper.  In a another bowl, beat the egg, milk and oil. Stir into dry ingredients just until moistened.  Add red pepper and gently mix them into batter. Fill greased muffin cups three-quaraters full. Bake at 400 degrees F for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Refrigerate ...

Avocado Cornmeal Muffins - Muffin Mondays (Tuesday)

I watched Mark Bittman make an avocado smoothie, once upon a time, and I couldn't imagine drinking it, despite my love for avocado.  It has been bothering me that I didn't even try it so when the idea of cornmeal muffins with avocado came up, I went for it.  Avocado is my friend and I knew, I could trust it with cornmeal. Recently, I have been more daring with vegetables and tried some, I have avoided for years.  In most cases, I liked them or saw how I could cook them, disguised in a sauce.  I am working on "healthy"  and some vegetables are better than others.   I went through life making potato my vegetable.  I also ate corn and sometimes, broccoli.  Potatoes won out though and I could have eaten them, three times a day. In truth, I still could, I just don't. Avocado has become one of the most popular vegetables, for me.  I think, instead of potatoes, I could eat guacamole three times a day, now but I don't. Zucchini Walnut Muffins --- CEiMB

This is for Muffin Monday as well as CEiMB. I appreciate that  Ellie really does lighten up her recipes and I have not found the food lacking in flavor.  With Paula Deen and Ina Garten and other chefs who stress the butter, it is refreshing to find a recipe like this and in fact, a book of comfort food, all on the healthier side. Dried Fruit Muffins - Muffin Monday

 I love to bake but I don't usually have time to make complicated recipes.  Muffins are easy to make and take a minimum of time and I am happy, I made this commitment to weekly muffins, although I did skip Passover.   I bake these for my husband who likes rather plain baked good and loves nuts.  This fits the bill for muffins.  I do have to stay away from chocolate muffins or ones with chocolate chip because he is not a chocolate fan.  Horrors!  No gushy toppings but that works for muffins.  If these were cupcakes, I would be in trouble. Anyone else want to join in with a weekly muffin, let us know so we can check your blog for recipes. Muffin - Mondays - Mashed Sweet Potato Muffins

As I believe I mentioned, last week, I have no plans to bake cakes, cookies, pizza or any other recipe with "chametz".*  Passover is coming and it is a holiday when we prepare for weeks by taking all the leavened products and food out of the house.  We do this  by using it up and doing a thorough cleaning of all areas that have had food, during the year.  This is making your favorite sweet potato recipe and baking it in a muffin tin.  It was hard to retrieve the "muffins" from the tin.  Next time, I would add two eggs to hold them together and to puff them up.  Had this with a main course that had a strong taste and this was perfect to relieve the heat of the other dish. *  " One of the last jobs of cleaning the house for Pesach is to get all chametz out of the kitchen. Mexican Cheese Muffins for Muffin Mondays

Each week, I look through books and Internet sites to decide which muffin, I am going to make, this week.  I had quite a few choices but this cheese won out.  The actual recipe came from About.com Southern Food and was called Ham and Cheddar Muffins - not for me.  Ham is forbidden when one is kosher but I had no problem eliminating it and making a highly flavored cheese muffin.  Actually, I did not use cheddar, called for,  but I used the four cheese Mexican mix, which is now being sold locally and is scrumptious. Mexican Cheese Muffins Ingredients : 1 1/4 cups gluten-free flour mixture 1/4 cup cornmeal 2 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1 scallion, sliced thin 1/2 cup 4 cheese Mexican mix or any cheese of your liking 1 egg 1/4 cup oil Method: Preheat oven to 350 degrees F. Somewhere online, I saw muffins called Cinnamon Toast Muffins and I thought, to myself, how delicious they must be.  Tonight, I opened  the Southern Cooking Bible by Paula Deen and looked up muffins, in the index, to find one muffin and this is it.  Honestly, I thought a book with this title would have corn muffins. Paula does quite a bit differently than I usually do when I bake muffins and some of that, I did not change.  What I did change, was the amounts of fat and sugar, in the recipe.   I, along with many of you, have been reading about Paula and her diabetes.  She is being called a hypocrite and worse.  Many of us like Paula and her recipes and many of us, automatically change almost any of her recipes.  Being the queen of butta is not something to be proud of, in my opinion.  With so much stress, these days on healthy eating, is a chef responsible for what she promotes. I refuse to make any commitments on my blog but I will share what I would like to do.  You may wonder why, I would not make a commitment that is not particularly earth-shaking and where the consequences would be minimal. Like all stories, it goes back to my childhood.   I was always in the second tier which, in reality was pretty good.  Academically, I was just fine but I was not on the honor roll.  Sports, I was a champ in ping pong......need I say more?  Music, I had the opportunity to play in Carnegie Hall but I didn't.  I had lots of friends, friends I could have been proud of but I never thought of that, then or now.  If I really think about it, they were not the most popular girls but they were the most liked. I worked on the literary extra curricular activities, the Year Book and the newspaper where I had my own column and wrote many other articles.  Gee, I wrote a play in third grade and the teacher wanted it presented.  (Note th...
