It is Donna Hay time again and I selected this week's recipe, this interesting bread.  I have to be honest, I made this weeks ago and I have completely forgotten what it is like.  I hope, I can find the photos.  I hope the other bakers liked it.  I will learn NOT to be so organized. I hope this is the bread. banana, hazelnut and chocolate bread  (adapted) 125g butter, softened 1 cup  brown sugar 1 teaspoon vanilla extract 2 eggs 2 cups mashed banana ½ cup  toasted hazelnuts, chopped 1 cup  chopped dark chocolate 1¾ cups  plain (all-purpose) flour, sifted 1 teaspoon baking powder, sifted 1 teaspoon baking soda 1 teaspoon ground cinnamon ⅓ cup  maple syrup Preheat oven to 160°C (325°F). Zucchini Walnut Muffins --- CEiMB

This is for Muffin Monday as well as CEiMB. I appreciate that  Ellie really does lighten up her recipes and I have not found the food lacking in flavor.  With Paula Deen and Ina Garten and other chefs who stress the butter, it is refreshing to find a recipe like this and in fact, a book of comfort food, all on the healthier side. Apple Nut Cake without apples

I got my ingredients out, was creaming the sugar and oil (instead of butter) and my husband said, he did not want apples.  OK, I am flexible but this cake called for 3 cups of diced apples.  I did some scurrying.  I added a cup of ground walnuts and upped the chopped nuts to a cup.  I added another tablespoon  of oil and then I hoped for the best. I am sure the results are no thing like the apple cake, Taste of Home aimed for but I have to tell you, it is delicious.  It is like toffee, nice and chewy in the inside. I am sharing with you the correct recipe for this apple-nut cake.
