Banana Mini Bundts

Image
These bundts are not the small ones but the ones that are the size of muffins.  I used a recipe for muffins and the time for baking was a bit too long for this size. Everyday Baking is a book for everyone's library.  Many recipes take no longer than 30 minutes baking time.  If you are like me, time is of the essence and knowing something will be ready in a short time, means last minute guests can get a yummy treat. The selection of bakes is well rounded and appealing. I have not come across a recipe in which I didn't have the ingredients.  It is an accessible cookbook.  There is a chewy cherry chocolate chip cookie that is on my list and I am giving this serious thought for my grandkids.  After that, I have plans for an easy caramel banana galette followed by lemon scented blueberry cupcakes.  Yes, I could go on and on.  You will have to trust that there are recipes for everyone. I love bundt cakes because they make any cake look better. Transfer 1 1/2 tablespoons of the flour mixture to a small bowl, add the cherries and toss to coat and set aside. In another small bowl, combine the milk and the almond and vanilla extracts and set aside. In the bowl of an electric mixer  beat the oil and sugar.  Add the eggs one at a time, beating well a...

Cranberry Orange Mini Bundt

Image
This is really a recipe for a quick bread.  I am hosting a brunch in conjunction with Eggland's Best .  More to come about this special brand and hopefully, my special brunch. The brunch explains why I fancied up the bread into mini bundts.  I hope to post recipes for the brunch, over the week.  I am freezing them, as much as, I don't want to.  I see no way, to bake and cook all the food, the day of the brunch.  I will have to make such items as omelets or pancakes, at that point so baked goods are being hidden, in the freezer to be brought out and hopefully devoured. I do want to mention that Eggland's Best is having a contest with cash prizes.  Check here and why not send in your favorite recipes.  You could be the winner.  I would be happy if anyone of you did win.  I posted a muffin, last week for this Muffin Monday, so I thought, it was appropriate to make a quick bread, in place of a muffin, today.  In my plans fo...

All-in-one Holiday Bundt Cake BWD GF

Image
It is my time to pick on Baking With Dorie and I am happy with my selection. I chose the All-in-One Holiday Bundt Cake and it is a really good cake with everything in the world in it.  I have been having difficulties with my bundt pan. Everything seems to stick to it and I have not gotten a decent cake from it in months. It is a Nordic and I love their stuff. I have to figure out what I am doing wrong. As a result, I made mini bundts. I had fun with these. I ended up making five different shapes. There is a lot of batter in this recipe and when I filled 6 mini-bundts, I had enough batter for three more minis. Since hubby is vehemently against any kind of icing, I sprinkled confectioners' sugar on a few of the minis and left the remaining, nude.  In my house, the naked cake is the winner.  I have gotten used to not making pretty cakes.  As long as they taste good and hubby likes them, I am fine with it All in One is perfect for this holiday cake. ...
