Cranberry Oatmeal Walnut Cake - THB

The latest bake for THB, the Home Bakers is Cranberry-Oatmeal-Walnut Cake , selected by Kit from I-Lost In Austen.  The recipe is on her blog.  She made these huge muffins.  What a treat! I made mine gluten-free so I never know how to compare it to those are baking with "real" flour.  This cake called for a full one and a half cups of oats.  All in all, it was not sweet enough for my taste.  Some of the bakers used dried cranberries which are sweeter and had a better cake.  The fresh cranberries are quite tart and even hubby commented on it. Cranberry Orange Mini Bundt

 This is really a recipe for a quick bread.  I am hosting a brunch in conjunction with Eggland's Best .  More to come about this special brand and hopefully, my special brunch. The brunch explains why I fancied up the bread into mini bundts.  I hope to post recipes for the brunch, over the week.  I am freezing them, as much as, I don't want to.  I see no way, to bake and cook all the food, the day of the brunch.  I will have to make such items as omelets or pancakes, at that point so baked goods are being hidden, in the freezer to be brought out and hopefully devoured. Cranberry Chicken QED

I have posted very few of my chicken recipes even though, I make it weekly, so here is one, I made last week.  This brings back memories of dishes, I made, many years ago, when I was newly married. I looked on the Internet for a recipe and found, after looking at a dozen of them, they are basically the same, so I decided on making up a recipe based on all of them.  This is a Quick, Easy and Delicious recipe. Cranberry Chicken Ingredients: 4 skinless, boneless chicken cutlets 1 tablespoon Osem dehydrated onion soup mix 8 ounces cranberry sauce 1/4 cup chili sauce handful of raisins or any dried fruit 1 teaspoon of lemon juice Method: Preheat oven to 350 degrees F . Place the chicken cutlets in a baking dish. Stir the onion soup mix, cranberry sauce, lemon juice and chili sauce together in a bowl until well blended. Pour over the chicken breasts. Cranberry Almond Coleslaw

Over the years, I must have made about 40 different coleslaw recipes.  Tyler Florence made the best one, I have ever made.  I guess, I am not in love with it because I keep trying new recipes.  None have been better, as far as I am concerned, than Tyler's. I came across this recipe which sounded good.  I like both fruit and nuts added to a traditional coleslaw recipe.  I have added apples and all kinds of nuts.  I have added raisins and cranberries and other dried fruit.  I have made it with and without mayo. This recipe did not call for any mayo which I considered a positive until I tasted it and it was not rich enough.  I added just a little but it made a difference.  I would also add one apple, thin sliced, in the future. The texture had the crispiness of the cabbage and the crunch of the almonds and the chewiness of the cranberries.  That worked well. Cranberry-Almond Coleslaw adapted  September 2011 ...

Cranberry, Pecan and White Chocolate Cookies

 First, I thought that this unusual combination would not go together but they did mesh beautifully and I have a new cookie to add to my repertoire. Cranberry, Pecan and White Chocolate Cookies The richness of the flavors blended together is just right.  I love the softness of the cranberry in contrast with the harder pecans and chocolate – I love chocolate.    This was an easy recipe, using one bowl instead of the usual two bowl method. Ingredients: 3 cups gluten-free flour mixture 1 teaspoon baking soda                              3/4 teaspoon salt 1 cup margarine 1 cup brown sugar 2 eggs 1 tablespoon vanilla 1 cup dried cranberries a cup white chocolate chips 1 cup chopped pecans    Method: Preheat oven to 350 degrees. Blondies with Cranberries and Almonds (for Passover)

Previously, I posted Passover Blondies with Chocolate Chip s on Comfy Cook's Kosher Kitchen.  The recipe was from last year and I had no photos.  To rectify this, tonight, I baked more blondies but instead of the chocolate chips, I put in cranberries and almonds. Everyone who has a blog is old enough to know that life is not one smooth road and some of the bumps are really small but knock you around a bit.  Tonight was one of those nights.  Nothing really happened but those little bumps got in my way and changed my plans. This is the time of the year, when I do the most cooking and in some ways, the most challenging.  I think that is why those bumps seem bigger than they are.  When we change our kitchens for the Passover holiday, it means packing up your dishes, pots and pans, utensils and basically everything.  Sometimes, this happens by simply taping a cabinet and not using it.  Other items are completely removed to make space for the Pesach...
