Curried Butternut Squash and Apple Soup/Half Time

Sunday was a fast day and I completely forgot to make something to break the fast with.  Although, I had nothing to eat nor drink, all day, I was busy preparing for the school week and I never felt hungry. Suddenly, the sky darkened and I panicked.  I knew, leftovers sat in the kitchen and the worse scenario would be to eat them.  Usually, we eat dairy or soup after a fast and I decided, Superwoman was being called upon and she came through. I had a butternut squash in the refrigerator.  Whisked it out and cleaned it and as quick as a wink, I "roasted" it, in my microwave.  It took about ten minutes.   While it was "roasting", I cut up the onions and put them in a pan with and olive oil.  Then, I pretty much followed directions, up until the part about simmering it.  No simmering for us and it was fine.  I did cut out the water to keep the flavor.  I suggest following Ina's directions unless you too, are racing against time....

Chocolate Ganache Mini Bundts - Ina's Garden

We decided to have a Wild Card for this week's Ina Garden.  Since my granddaughter will be celebrating her birthday, at our home, I decided to make mini bundts.  She is only turning one so small cakes sounds appropriate.  I have decorated each of them differently. Since I had the Marshmallow Fluff out for brownies, I was making, I decided to use that with the chocolate ganache to make it even more festive.  I had fun with different sprinkles and designs. Chocolate Ganache Mini Bundts   (adapted) Ingredients: 7 1/2 ounces oil, at room temperature 1 cup sugar 4 extra-large eggs, at room temperature 16 fluid ounces chocolate syrup  1 tablespoon pure vanilla extract 1 cup all purpose flour For the ganache: 1/2 cup heavy cream 8 ounces good chocolate chips  (Semi-sweet) 1 teaspoon instant coffee granules Method:  Preheat the oven to 325 degrees F. Oatmeal Raisin Cookies - Ina's Garden

This week, Mia has chosen appetizers and snacks as the them for our recipes.  Since, I am in baking mode, I thought, I would make more cookies to send to the soldiers which means, I am also temporarily leaving Martha Stewart and aiming in Ina's direction. I found this recipe for Raisin Pecan Oatmeal Cookies and went with it.  It went together nicely and produced fine cookies.  All my memories of these cookies have taken on a realistic shape and I am enjoying this, very much  Thanks Ina. Welcome to Ina's Garden

It is with great joy that we invite you into Ina's Garden, a brand new, exciting group.  We love Ina and her recipes and the positive vibes, we get from her. Tomorrow, our new blog hop is going into effect with our first recipe, Orange Pound Cake.  I made mine, quite a while ago, because the holiday of Passover was heading our way and I knew, I would not have time to bake regular cakes.  As a result, I don't remember the details of this baking.  I know it went together easily and I made up my own glaze.  Any details have flown far away with all the business of planning for the holiday.   I have copied the following from April since she says it so well and because I have no time to do it.  April has been the force behind this group, in the last month, and I and all the other gals appreciate her time and her clarity.  Thanks April.
