Brownie Mix Cookies - Yum

There are no words to write about this cookie.   Just look at it.  It is easy to make since it starts with a mix (no, I don't use mixes........ except this time).  It turned out to be the yummiest cookie and I think I will make it again, very soon......like tomorrow. And YES, I had grandchildren over today.  Who else can I bake chocolate for? Chocolate Chip Brownie Cookie Ingredients: 1 package. Duncan Hines fudge brownie mix 2 eggs 1/4 cup oil 1 3/4 cup semi-sweet chocolate pieces Method: Preheat oven to 350 degrees. Cover cookie sheets with parchment paper. In large bowl combine the brownie mix, eggs and oil. Beat with a spoon about 50 strokes. Stir in the chocolate pieces. Drop by rounded teaspoonfuls 2 inches apart onto cookie sheets.  I use a cookie scoop. Bake at 350 degrees for 8 to 10 minutes. Cookies are soft to the touch. Brownie Cupcakes

Makes these and they will speak for themselves. Brownie Cupcakes: adapted from Joy of Baking 4 ounces bittersweet chocolate, shredded 2 cups margarine, cut into pieces 1 1/4 cup sugar 1 teaspoon pure vanilla extract 3 large eggs 3/4 cup flour 1/4 teaspoon salt Preheat oven to 325 degrees F and place rack in center of oven. Line 12 muffin tins with paper or foil baking cups. Melt the shredded chocolate and margarine in microwave. Once the chocolate is melted and smooth, remove and let cool for a few minutes. Then stir in the sugar. Add the vanilla and then add the eggs, one at a time, mixing well after each addition. Mix in the flour and salt until well blended. Evenly divide the batter between the muffin cups. Place in the preheated oven and bake for about 20 - 25 minutes or until a toothpick inserted in the center of a cupcake has moist crumbs. Bake With Bizzy - Chocolate and Peanut Butter Brownie Bites

With a name like the above, who could resist making these?  Not me.  I decided to make these for my class but they may be too gooey to bring to school.  I think you will see how fudgy the brownies are from the photos. I found the recipe online so I don't have to retype it which I admit, makes me quite happy.  I love blogging.  I don't love typing the recipes.  There is a photo of their brownies that is nicer than mine so if you want to see it, in all its glory, go on over and take a look. This recipe is better than the one in the book since it gives you a few hints that I did not find in The Neely's Celebration Cookbook. Chocolate and Peanut Butter Brownie Bites Brownie Batter:

Bizzy the Explorer - Week 3

I love this feature.  Every week, I honestly do explore until I find a blog that talks to me.  Sometimes it is the photography, sometimes it is the recipes and others, it just speaks louder than other blogs and I am able to hear it through its heart.
