Roasted Chick Peas

This is a great snack or a side dish for dinner or lunch. It is easy to make, needs little in terms of ingredients and it is scrumptious. I took it out of the oven and started popping these, in my mouth. They can become addictive. I am not a chip person although I like all kinds of chips and could easily start munching on them. I choose not to. On the other hand, I finally realized, I like savory snacks more than sweet ones. I love chocolate and could indulge with ease but if I grab a cracker, I can happily stop there. These chickpeas are terrific to satisfy that desire to snack. I hope you give these a try. Roasted Chick peas Ingredients: 1 container of marinated chickpeas (16 ounce) olive oil spray salt and pepper to taste Method: Preheat oven to 400 degrees F. On a cookie sheet, place chickpeas. Middle Eastern Vegetable Salad - Ina Fridays - Ina Garten

My husband returned home from out of town and I wanted to make him something special so I asked.  Not a giggle out of you guys, please.......... He asked for mac and cheese.  I am guessing he was eating a lot of meat while away.  I know that every time, I spoke with him, he was eating on the run or making food for his grandkids.  For a man who usually eats vegetables and dairy, I don't think he got too much of these. He asked for it so he got it but I made a delicious salad to enhance the pasta dish.  Please keep in mind, I had all kinds of exotic plans, for this meal. Sweet Potato Medley

    Sometime, we find recipes that are total winners and this one turned out to be  just that.  I was checking out The Tasty Alternative , a site that caters to those who are on special diets, such as gluten-free, dairy free or sugar-free.  There are wonderful recipes and beautiful photos and I am betting you will want to visit. I wasn't sure what to expect from the recipe.  I know that it looked good and has sweet potatoes which I love.  The added apricots and coconut milk were other  incentives to make the dish.  Honey finalized my decision. I followed my gut and it lead me in the right direction.  If I had been cerebral about this, I would have mentioned that I could not see how the beans fit into the recipe, but they did.  Everything blended to make a slightly sweet temptation.
