Cheese Puff Blintz

For years, I have made real blintzes and a blintz souffle which consists of store-bought blintzes covered with a batter that tastes like a blintz. Both are good. When, I spotted this one, I was curious to find out if it tasted like either. This is an easy recipe. You do have to time each segment and for me, that is a problem. I love to put something in the oven and go back for a finished product. This is a three-layered blintz with two separate baking times. It is not really much especially, if you make the filling while the first ten minute baking, is going on. Probably, because I was baking something else, at the same time, I got annoyed with the interruption. I enjoy puttering around the kitchen and although I think I should not enjoy the chopping and frying and shredding and dicing, I do. Spicy Cheese Puffs

This is one of those recipes, where the cheese you select determines the recipe.  I made this too spicy for my husband and will have to make other choices, next time.  I liked it and think the spices make it a lot better. I love cheese shopping and the kosher market has expanded the types of cheeses that are going out to the consumers.  Years ago, we were very limited.  Now, there is a great variety.  Last week, I bought one of those spiced, twisted mozzarella cheese packages.  There was one type that clearly said it was spicy.  This one did not.  When, I decided to use it, in the puffs, I did not know what was going to happen.  I added some Gouda to the recipe because I love Gouda and I have been throwing into all kinds of dishes and it works well, with almost anything.  Shredding Gouda is not effective because of the softness of the cheese. Nutty Sweet Potato Puffs

This is another treat for Passover or throughout the year.   During the year, you can use flour instead of the potato starch.  I don't have nutmeg for Pesach but that would be a good addition also - 1/2 teaspoon. Nutty Sweet Potato Puffs Ingredients:  2 cups of cooked, mashed sweet potatoes 1 tablespoon potato starch 1 egg 1 tablespoon oil 2/3 cup ground nuts  (filberts, walnuts, pecans) 1 teaspoon cinnamon Method: Preheat oven to 350 degrees F. Cover cookie sheet with parchment paper. To make sweet potato mixture smooth, put in food processor with your egg and oil and mix it until it is creamy and smooth. Add to this mixture, all other ingredients, except nuts. Refrigerate for an hour or two. If the mixture is too wet to make balls out of, add some additional potato starch until it is the right consistency. Shape the mixture into small balls and place on cookie sheet. Sprinkle chopped nuts on top of puffs.  The nuts should go down...
