Peanut Butter Brownie Squares

The proof that this was a yummy dessert is that it disappeared quickly.  Do people like peanut butter as much as chocolate? Peanut butter is an interesting spread.  I put some on a cracker for my granddaughter who pushed it away.  Then, I gave her a spoonful of peanut butter which she loved and wanted more.  I happen to agree with her.  There is nothing like a spoonful of peanut butter, rich and creamy and delicious. I grew up on cream cheese and jelly sandwiches but I have a feeling others went the peanut butter and jelly route.  Did I miss out? Childhood memories of strange and delicious foods.  I used to take a sandwich maker which was a metal mold on the end of a long pole that you put in a sandwich and hold over the fire.  I used to put apple sauce between two pieces of white bread and "cook" it and it was out of this world.  Who would have thought....? Asian Cole Slaw

I thought Asian Cole Slaw sound different and yummy but now I am not sure.  The soy sauce turns it brownish so it looks like it has been sitting around for months.  The flavor  is good especially with peanut butter in the mix.  Unfortunately, people don't gravitate toward it. I would like to use this sauce again on something else.  It would be great with noodles or chicken or broccoli. Asian Cole Slaw Ingredients: 3 tablespoons Mirin 3 tablespoons  oil 2 tablespoons creamy peanut butter 1 1/2 tablespoons soy sauce 2 tablespoons brown sugar 1/2 teaspoon dried ginger 1/2 tablespoons minced garlic 3 cups thinly sliced green cabbage 1/2 red bell peppers, thinly sliced 1 carrots, shredded 1/2 teaspoon chopped cilantro Method: In a medium bowl, mix the Mirin, oil, peanut butter, soy sauce, brown sugar, ginger, and garlic. I found this wonderful recipe on Bon Appetit , a blog, not the magazine.,  Go take a look and see for yourself. I knew it would be a hit and even though, I was missing some of the ingredients, I went ahead and put it together. What a success!!!! It was easy to make and delicious to eat. For the original recipe, go to the source and get all the details. Of course, it doesn't hurt that this is a recipe, originally from Nigella Lawson, one of my favorites. What I like about her is the way she writes her books, with cute phrases, hints and interesting pieces of information.  It is like reading a novel with fantastic recipes included. This recipe is from a few years ago and I see that she has a new recipe for this salad that looks interesting too.  It is on Food Network. What is it about peanut butter that improves a dish?  I am not a big fan of peanuts but I do love peanut butter.  I was glad that separate peanuts were not included in the recipe.  The peanut butter did its job and even hubby who supposedly hates peanut butter (and loves peanuts) gave a top rating to this dish.  Halfway through, he asked what was in it and I cringed a little but he accepted the peanut butter with grace. Peanut Noodles   (adapted from AllRecipes magazine) Ingredients: 8 ounces Gluten-free spaghetti 1 bunch green onions, sliced 2 tablespoons sesame oil 1/4 teaspoon  ginger 1/3 cup peanut butter (smooth) 1/4 cup GF soy sauce 1/4 cup hot water 1 tablespoon GF vinegar 1 teaspoon white sugar  (This can be omitted for a healthier result) 1/8 teaspoon crushed red pepper flakes Method: Cook pasta in a large pot of boiling water until done. Peanut Butter Maple Cookies

This recipe from allrecipes.com intrigued me with the unusual combination of ingredients. Maple syrup and peanut butter are new to me but they sounded as if they would "mate" well. Actually, I think the cookie would be better without the maple syrup and I am a big fan of maple flavor. Whatever the reason, it did not appeal to me.  It might very well be perfect for you though. Peanut Butter Maple Cookies (adapted) Ingredients: 1 cup margarine, softened 1/2 cup peanut butter, smooth 1 cup sugar 1 cup packed brown sugar 2 egg beaters 1 tablespoon maple syrup 2 teaspoons vanilla extract 2 cups gluten-free flour 3/4 cup GF oats 1 1/2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon salt Method: Preheat oven to 325 degrees. Asian Slaw with Ginger Peanut Dressing

For the holiday, I made a Thai salad but didn't take a picture of it.  Since I still had slaw left, I decided to find a similar recipe and make it.  We liked the first and I think this one is even better.  The difference is the peanut butter.  I think nut butters make all the difference, no matter how little you put into the dish. My favorite part of using peanut butter in a recipe is the spoonful I get to indulge on.  Yummy.
