Apricot Honey Chicken

When you need an easy recipe that does not take a great deal of time, Taste of Home, is the place to go. I was looking through the Simple and Delicious and found this chicken recipe. A pricot Honey Chicken (adapted from Simple and Delicious magazine) 4 sevings Ingredients: 4 boneless skinless chicken breast halves 1/3 cup honey mustard 3 tablespoons apricot preserves 1/4 teaspoon ground ginger Dash each salt and pepper Method: Flatten chicken to 1/4-inch thickness.  In a small bowl, combine the mustard, apricot preserves, ginger, salt and pepper.  Place the chicken on a greased foil-lined baking sheet. Spoon half of the mustard mixture over chicken. Bake for 24 minutes. Linked to See Ya in the Gumbo

My Meatless Mondays - Apricot Kabocha Squash

If you don't mind baking a squash and adding a little jelly, you have the easiest,creamiest sweet side dish that goes with almost anything.  I have been in love with kabocha since I came across it. It has this natural sweetness and wonderful texture and like all squash is versatile in its use. When I bought this kabocha, I had planned to fuss with it, but at the last minute, I had little time to do something with it. I stuck it in the oven and figured if worse came to worse, I would mash it and serve it plain. Plain kabocha squash is delicious. As it turns out, I made one change to this, I added two tablespoons of apricot jelly to the squash, mashed it and served it. How easy can you get? Muffin Mondays

I refuse to make any commitments on my blog but I will share what I would like to do.  You may wonder why, I would not make a commitment that is not particularly earth-shaking and where the consequences would be minimal. Like all stories, it goes back to my childhood.   I was always in the second tier which, in reality was pretty good.  Academically, I was just fine but I was not on the honor roll.  Sports, I was a champ in ping pong......need I say more?  Music, I had the opportunity to play in Carnegie Hall but I didn't.  I had lots of friends, friends I could have been proud of but I never thought of that, then or now.  If I really think about it, they were not the most popular girls but they were the most liked. I worked on the literary extra curricular activities, the Year Book and the newspaper where I had my own column and wrote many other articles.  Gee, I wrote a play in third grade and the teacher wanted it presented.  (Note th...
