I am pretty sure that the cookbook, I used the most this year, is the Taste of Pesach which is a project of Yeshiva Me'on HaTorah.  I  think the book is a masterpiece, not only for its very good recipes but also because of the arrangement of the page and the photos which give you a picture you can replicate, if you choose. Each page has a blurb about the recipe, a photo, a list of ingredients in a box on a darker background.  It is divided up into sections based on what kind of food is being discusses, meat, poultry, desserts, etc.  I like this because I plan  my own menus and have a hard time finding what I want in books that share menu after menu with all the courses lined up.  I see the value of these books if you want it basically set out for you but it does not work well for me. Balsamic Chicken with Basil Rice

This recipe was supposed to Balsamic Chicken with Garlic Couscous.  Since couscous has gluten, I substituted rice and since hubby gets sick from garlic, I used some garden grown basil. I made a mistake when I planned the weekly menu forgetting WWDH.  I can't forget Donna and her recipes.  I enjoy them too much.  Margaret selected this week's dish and I am thinking, we all agree it is a wonderful choice. After marinating the chicken, it is cooked in a fry pan for a few minutes on both sides.  The rice is cooked in the soup and I added the basil.  Although, this has differences from Donna's recipe, it is a great dinner.  I served some baby spinach with it to finish out the plate. Avocado-Carrot-Radish Pasta Salad with Feta

A new blog to me is Ewe Creek Cottag e. I put it in the category of charming blogs. Not only did I find the site but also a recipe, I decided to make for lunch today. The main ingredients of the recipe are pasta, cucumber, zucchini, summer squash and goat cheese. Now take a look at the title of this recipe. Yep, that is the result of not having what I thought, I had, on hand. It is a comedy of errors. Get the cuke (Sure I had a long English cucumber, just waiting for me.) Not any more. Get the zucchini - Oops, I forgot, I used it in another dish. Summer squash, I knew I did not have any. Goat cheese - yes it is in the refrigerator, sealed closed. How could I use it when I have an opened package of feta? Wonderful salad at the Ewe Creek Cottage but only the dressing sort of matches the original recipe, which I still want to make. Balsamic Glazed Salmon

It has been a busy week, starting on Tuesday with my grandson's wedding.  It is the custom, in Judaism, to have festive meals, for the entire week, following the wedding.   While it is nice to be wined and dined, each day, it is also tiring.  Thus, I am exhausted from having too much fun - a nice way to tire oneself out. Now, the Jewish Sabbath is upon us which means more festive meals.  I decided to empty my refrigerator and throw it all together to make, hopefully, some delicious meals. What do I have, one zucchini, some frozen corn, apricot butter, hot pepper sauce, Balsamic vinegar, salmon, carrots, onions, scallions, and roasted tomatoes.  Additional produce shows potatoes, onions, bell peppers and cherry tomatoes.  Let's see what I can do with these.
