Blintz Brunch Bake

This was a super treat without the work of making crepes and filling them and frying them,  This is much easier to make and does not call for any frying.  A rich baked recipe is just what we want.  Delicious. Blintz Brunch Bake (adapted from Kraft Recipes ) Ingredients: 2 packages (8 oz. each) Cream Cheese, softened 1 container (15 oz.) Ricotta Cheese 5 eggs, divided ¾ cup sugar, divided 3 tablespoons lemon juice 1 cup gluten free flour (I used brown rice flour) ¾ cup butter melted I melted butter in the microwave and forgot about it. It did not need it. The first Friday of the month has arrived and so has Ina Garten Fridays.  Ina Fridays is a group who cooks recipes from the Barefoot Contessa monthly.  We do have a theme as to what part of the meal is represented.  This month, we are sharing appetizers.  I left my choice to the end of the month and as life would have it, an answer came to me by chance.   My husband went to a Bris (ritual circumcision) in the morning and brought me back a bagel and a large piece of cheese cake.  The day before, looking for appetizers, I had come across this spread but was not enthusiastic.  When I saw the bagel, I thought perfect, I will have it on a bagel.  I only cut up half to make it an appetizer.  It would have been yummy between two halves of the whole bagel. Wonton Warrior has been a busy person, dictating to us, what kind of wontons to make and what other tricks there are for the use of wontons.  For example, sprinkle with a  little cinnamon and sugar and bake and you have delicate cookies. When he said the word, chocolate, both Bizzy and I jumped for joy.  Chocolate can't be beat.  I found this recipe on Yummily and it has the most endearing name - Ridiculously Easy 4-Ingredient Chocolate Chip Wontons.  I made half the recipe and  should have made more. I served these at the family barbecue and the first reaction of people was "Chocolate in a wonton?"  That makes sense since, wontons are more often found in soup than as a dessert.  I made them with Tofutti cream cheese but I recommend that you use real cream cheese. Last night, I planned to make a nice chunky soup, you know the kind that fills you up.  One bowl, and you are groaning, you are so full.  That was the plan.  What do they say about the best laid plans? I walked in, after work, and all I could think of was my bed, a place to fall into to sleep.  I was sure that peeling, chopping and seasoning was too much, for me.  Please tell me, you get like this, at times.  I usually pull, one day a week, like this. Forget the carrots, potatoes, onions, lima beans, sweet potatoes, kidney beans, celery and anything else, I would have thrown in.  Forget the aroma of a rich and vegetable soup, simmering on the stove.  Forget it all.  Forget dinner to. Cream Cheese Coffee Cake

We are listening to the thunder and the rain which comes down in torrents, when it does come down.  So far, so good and we are optimistic. To prove to you I am cool, I have just baked two cakes, on a cream cheese coffee cake and the other a Mango Nut Yogurt Cake.  Made them both gluten-free for hubby but I will be sharing this.  They are still baking and if possible, I will get a photo up, tonight. Savory Cheese Cup - QED

It was time to fulfill a yearning for something savory and something dairy.  In my head, I went through all kinds of combinations. As a cream cheese lover, this was to be my path.  Cream cheese is versatile.  We use it for sweet as in cheesecake and we  use it in savory, such as with potatoes, mushrooms or onions.  Put it on a bagel with smoked salmon.  Off to combine some ingredients and see what happens.  I am making this for one person and that is me. Savory Cheese Cup Ing redients: 1 tablespoon Baco Bits 4 ounces whipped cream cheese 2 eggs 1/4 cup milk salt and pepper to taste 1 tablespoon chives (If you want to get your veggies in, chop up some bell pepper or tomatoes and mix in.) Creamy Chocolate Puffs

Before making wontons, I made a variety of puff pastry creations.  Anything sweet was pulled off the shelves and into my puff pastry creations.  Frantically opening containers and matching up the contents with another jar or box, was fun and challenging.  Puff pastry was easy too work with and in most cases, resulted in successful cookies.  I ran out of puff pastry before I ran out of ideas. One of the boxes of puff pastry came in squares and were much easier to work with.  I used them first for the cookies, I rolled up. I made different kinds of these and the best were the chocolate chips and Tofutti cream cheese.
