Tuscan Kale Salad - Spinach Salad - Ellie Krieger

This week, for Eating With Ellie, Kayte chose a delightful salad, Tuscan Kale Salad, found in Ellie Krieger's book, Weeknight Wonders , a book, I love.  So far, every recipe was a success and was healthy and delicious to eat.  Page 41 is the page to find the recipe or here. I did not have kale so I subbed in baby spinach and in place of pine nuts, I used almonds.  I followed the rest of the recipe and although this is an easy recipe, cutting the spinach into thin strips took some time.  It looked pretty this way. ****I have decided to move my Donna Hay posts here from My Sweet and Savory since I have put it to sleep.  I love my Donna recipes and want to share them with you.  There will be several new posts brought over and I do hope you make some of them.  Donna produces good recipes.*** T his week was a real winner for my Wednesdays with Donna Hay. Kayte chose this marvelous -Tomato and Basil Poached Fish, on page 96 (photo page 97) in Off the Shelf. We both loved it and ate every single drop in the pan. This recipe had potatoes, onions, fish (I used salmon because, I had no time to go to the store to get some flounder or sole, which was what I had planned on using.) I added some kale which fit like a glove. It called for a lot more tomatoes than vegetable soup and I split the two equally. At that, I had to add some more soup to keep the salmon under the liquid. Another week, another vegetable for our Power Food group, a bunch of women who strive for healthy eating with the most delicious dishes. Each blog is inspiration . Each week, we choose a recipe based on the power food which comes from the book, Power Foods, 150 delicious recipes with the 38 healthiest ingredients from the editors of Whole Living magazine. This week, kale is the next vegetable in the book. This is another vegetable, I have never made and I doubt that I have eaten. Why not? The answer may be found in an experience, my husband had, this week. I had forgotten all about the kale and when he called me, on his way home, from work, he asked if I wanted anything from the store. I was super thankful for this offer and told him, "kale." He went to the local store, made his way through produce, helplessly looking for kale. He pulled over some women customers and asked them which was kale. White Bean and Sausage Ragout

This is a Cooking Light recipe and to my dismay, it was called White Bean and Sausage Ragout with Tomatoes, Kale and Zucchini. One of the reasons, I have difficulty titling recipes is because of a trend of listing all the main ingredients, in the title. I am guilty of doing this, as well, but I don't really like it. I understand, by naming all the ingredients, it is apt to have something that appeals to almost everyone. On the other hand, who wants to read an ingredient list, as the title of the recipe? The problem is, what gets cut out? In this recipe, everything is important. There is no star. Each food works with the others and the result is in the total dish. I decided to shorten the "real" title and use the first words, White Bean and Sausage Ragout. I could have called it, Kale- Tomato Ragout or White Bean and Tomato or Sausage and Zucchini......you get the point. In the end, I guess it does not matter, in this case.
