Greens with Fruits and Nuts

Salads are a delight in the summer with the high temperature and humidity.  It nice to change them around by adding ingredients, you might not expect to find.  I have been putting strawberries into salads for years but not blueberries.  I admit, I hesitated, not knowing if they would be accepted.  They turned out to be a wonderful addition to the salad. Greens with Fruits and Nuts Ingredients: 8 ounces mixed greens of choice 1/2 cup strawberries 3/4 cup blueberries 2 tablespoons chopped pecans 1/2 cup slivered almonds Dressing - 1 1/2 tablespoons olive oil 1 1/2 tablespoons apple cider vinegar 2 tablespoons lemon juice 1/2 teaspoon honey 1/4 teaspoon sea salt 1/4 teaspoon fresh ground pepper Method: In a bowl, place all makings of salad except dressing. Hot Potato Mustard Dressing - Donna Hay

Last week I missed posting my weekly Donna Hay recipe but I did make it.  The schedule came out that this was due before the holiday of Shavuos and my priority was cooking for the holiday.  Actually, I ended up using this dressing for one of the holiday meals. Although, this is behind schedule, I want you to see it because it is delicious.  I didn't have time to make the potatoes as suggested.  I had made some baked potato knishes and I used this dressing on them.  Yummy. In my opinion, this would be great on meat, fish, vegetables or as a salad dressing. Kayte is the brilliant lady who chose Hot Potato Mustard Dressing from Off the Shelf on page 143. Spinach, Mandarin and Almond Salad

I have not gotten access to my blogs but I have found a back door, so to speak, which does get me here.  Of course, each time, I can't find it and search for a while before I have arrived here. The blog is like a little house with a front door and a back door.  Right now, the front door is locked and I at first, felt helpless as to what to do.  Actually, I still  feel pretty helpless.  I have written to Blogger and they are attempting to help me.  Hopefully, I will be able to come in through the front door again, soon. I am happy, we built this Blogger cottage with a back door though.  Can you imagine having no way in to your home or blog.  I could write a great story about the family who could not get into their home. I am still holding on to salads and this one is special with the pear tomatoes which are rather new to me.  There was a time, I would not try any new vegetable and as a result only had fresh spinach, for the first time, a few years ago.  Frozen spinach was fine for me.  Now, I have discovered fresh spinach and I use it almost every day. Yellow Pear and Cherry Tomato Salad  Ingredients: 2 tablespoons red wine vinegar  1 shallot, minced 1 tablespoon  olive oil 1/8 teaspoon black pepper  1 1/2 cups pear tomatoes (yellow, halved) 1 1/2 cups cherry tomatoes (halved) 1 1/2 cups fresh baby spinach, torn Combine dressing ingredients. In a large serving or salad bowl, toss together all the tomatoes. Pour the vinaigrette over the tomatoes and toss gently to mix well and coat evenly. Add the spinach and shallots and mix a little more.

Sweet Potato Salad with Orange-Maple Dressing

Enjoy this one.  It is really good.  I am always looking for savory recipes for sweet potatoes and this has an element of the savory along with the sweet. Sweet Potato Salad with Orange Maple Dressing (adapted from Bon Appetit - 2003) Ingredients:  Dressing 1/4 cup extra-virgin olive oil 2 tablespoons pure maple syrup 2 tablespoons orange juice 2 tablespoons balsamic vinegar 1 tablespoon fresh lemon juice 2 teaspoons pumpkin pie spice Salad 4large sweet potatoes, peeled, cut into 3/4-inch cubes 1 cup chopped green onions ½ chopped red bell pepper 1 cup chopped fresh parsley 1 cup pecans, toasted, coarsely chopped 1 cup dried blueberries, cranberries and cherries Method: For dressing: Whisk all ingredients to blend in small bowl. Season dressing to taste with salt and pepper. For salad: Cook sweet potatoes in boiling water for 20 minutes. Potatoes should be cooked but firm. You don’t want a mushy salad.
