I was looking through Inspired Taste when I saw this pasta and knew I had to make it. The site is fantastic with tons of recipes, you might want to make. I know, I do. My husband doesn't love avocado although he eats it, when served, but I love it, so this was more for me than for him. That is so unusual since I love cooking for him and usually make what he wants, before what I want. I eat a more varied diet and like almost everything he wants. He can't say the same. He eats a more bland diet than I like so I spice up my food on my plate, rather than in the cooking. This is not necessarily the same but it works well enough for me. I am married to one of those men who has done a lot for me, over the years, and cooking seems so small compared to all he has given of himself. Guacamole - Ina Fridays

A new group, cooking Ina Garten recipes has started and you are welcome to join us.  We are posting the first Friday of the month and we will have a broad topic, each month.  This is the schedule. I love guacamole and it would be hard to find one that I don't like and this passed with flying colors.  I realized, I like a smoother guacamole.  I did like the addition of hot sauce  and the red onion.  I usually add tomato to mine so that was not a new ingredient. Nutty Avocado Meat Loaf with Potato Topping

  This is another Operation Clean-Up recipe.  I have a few packages of chopped beef or turkey or chicken, in my freezer.  I took out the beef and then did my usual search.   Recently, on a Costco trip, we picked up a box of avocados and then I forgot about them. I had let them ripen and placed them in the refrigerator with a package of Bell peppers of all different colors.  I am wondering how I missed the avocados when I used up, all but one of the peppers (6). I have never done this before but I have, this past year, added avocado to many dishes so why not meat loaf.  I also don't usually add nuts to my meat dishes, at least not ground nuts but again, what should I do with a large container of ground walnuts.  You know! I should be embarrassed to admit what I used for the topping.  I keep instant mashed potatoes in the cabinet to use as a breading for hubby with celiac.  If you have not done this, I suggest, you try it....

Avocado Cornmeal Muffins - Muffin Mondays (Tuesday)

I watched Mark Bittman make an avocado smoothie, once upon a time, and I couldn't imagine drinking it, despite my love for avocado.  It has been bothering me that I didn't even try it so when the idea of cornmeal muffins with avocado came up, I went for it.  Avocado is my friend and I knew, I could trust it with cornmeal. Recently, I have been more daring with vegetables and tried some, I have avoided for years.  In most cases, I liked them or saw how I could cook them, disguised in a sauce.  I am working on "healthy"  and some vegetables are better than others.   I went through life making potato my vegetable.  I also ate corn and sometimes, broccoli.  Potatoes won out though and I could have eaten them, three times a day. In truth, I still could, I just don't. Avocado has become one of the most popular vegetables, for me.  I think, instead of potatoes, I could eat guacamole three times a day, now but I don't. Tomato Casserole

There are times, I marvel at some of the recipes, I made on Chaya's Comfy Cook.  They are worthy of remaking and what I am doing now, is posting them, for me, to make, when I am able to.  Let me know what you think of this idea.  What if I used a cup of mashed avocado in place of the mayonnaise.  It would certainly make this cream and I am hoping it will bake well.  You are a bunch of talented foodies and I would appreciate your thoughts on this. This was originally a pie but I chose to omit the crust.   I turned it into a casserole, rich in cheese  with the possibility of additional vegetables.  I am hoping to make this, next week and welcome any suggestions, you have. Bake with Bizzy - Baked Vegetable Loaf

I put together a bunch of ingredients and ended up with a good-tasting dinner.  If you like vegetables, this is a good mix.  We took our first bit with trepidation.  Who knew what this was going to taste like.  The two of us finished the casserole which I believe speaks for the loaf.  I would like to use basically the same ingredients to make veggie burgers. Baked Vegetable Loaf Ingredients: 1 can  (15 ounces) black beans, rinsed and drained 1 medium red onion, chopped 1 small sweet yellow pepper, chopped 3/4 Shwarma seasoning 1 medium tomatoes, chopped 1/2 avocado, mashed 1/2 cup  shredded reduced-fat cheddar cheese 2 eggs 1/4 cup flour Method:  In a small bowl, mash black beans.  Add flour and eggs. Stir in the onion, yellow pepper, shwarma seasoning. Add tomato and avocado.  Mix in most of cheese, leaving a few tablespoons to sprinkle on top. Mix well.  Place in loaf pan. Tomato Mozzarella Salads - Taste and Create

I am so ashamed.  I can't believe what I did.  Taste and Create was due in on the first of the month.  Being an organized gal, weeks ago, I got the name of the person, I was partnering with and I went to her lovely blog and picked out some recipes to make.  I then did what a good blogger does and made something but I have no idea what the something is.  How does one lose a dish? Easily, is the answer, at least for me.  I run off lots of recipes and make some, each time, I go through the pile.  I then, type the recipe into the blog and schedule it.  This time, I didn't do it.   Of course, I went on cooking and never gave a thought to Taste and Create.  Sorry Min.  I went back to Avocado-Pesto and went through her recipes and while I have made similar recipes, they were not hers.  Feeling rather foolish, I picked out a new recipe, needless to say, an easy recipe, so I could get this in, only a few days late.  Note: I pr...

Creamy Avocado Omelet

I was looking through the site of the California Avocado Commission.  Sounds like a place for every foodie.  What I found, is tons of recipes, some quite innovative.  Dinner plans changed and I made this delicious omelet.  The way this was made is different than I have ever set up an omelet.  The problem, I did have was, I could not get the egg to cook through without burning the bottom of the omelet.  I think, using a larger skillet may be the solution for the next time.  This was for hubby and me.  I admit, he gave me a funny look, as I stuffed the omelet with cream cheese and avocado.  A first, for him too, I guess. Avocado Plus Tortillas QED

For us, Sunday dinner is a last minute decision.  True, with summer here, I imagine we will be using our barbecue more often.  On the other hand, with the cutting down of meat, I may want to stay away from it.  The barbecue says to me, what I will call plain food, burgers and hot dogs.  Even though, we barbecue chicken and other good foods, when I see that grill, I want a hot dog or burger. On Saturday, we eat a big meal and a festive one which means Sunday is crying for casual.  Usually, I throw something together, maybe a new recipe, or one that pops into my mind, or an really old standby, altered.  It is almost always easy to do.  This Sunday, I made a take off on grilled cheese although there was absolutely no grilling.  In fact, I pulled out the microwave to make these quickly.  I don't recommend it though.  I would use the oven to make this a lot better.
