Chicken Apple Meatballs in Onion and Apple Gravy - Joy Bauer

Meatballs with apples had instant appeal to me.  I particularly like that the apples are both in the meatballs and in the sauce.  There seem to be a lot of ingredients that go into this  but when I collected everything, it was all in the cupboard or refrigerator. I made the meatballs first and while they were cooking, I prepared the gravy.  The final dish was a dream come true;  I left small apple pieces in the sauce instead of making it plain creamy and this was a good decision.  It was a delight to get these chunks of apple which were still crisp with the creamy sauce and meatballs. I served this with roasted potatoes and a tossed salad. A true success story...... I felt happy feeding this to hubby and even better, I love it. Sicilian Potato and Egg Cake

I was about to make a Rachel Ray Potato Cake when I remembered, I had torn out from a Food Network Magazine, a recipe for a potato cake that looked more interesting.  Rachel's used sliced potatoes like a crust and the Food Network recipe used mashed potato.  I will always vote for mashed over sliced. This is the epitome of comfort food.   The mashed potatoes are creamy, the cheese adds zest and roasted red peppers were just right.  I am proud, I took only one generous slice.  Hubby ate the rest of the nine inch cake. My guess is children would like this even with the red peppers.  Next time, I would like to add caramelized onions to the cheese mixture.  I used smoked Mozzarella because I had it, in the house.  I had gotten it for my grandkids but they left a good share of the package behind.  It worked perfectly. One of my more embarrassing moments.  I can't find my Modern Classics 1 by Donna Hay.  I searched my house and it is no where to be found yet I remember exactly where I put it or at least, I thought I did. This is not the first time, I misplaced it.  One time, I did the house search and finally after two or three days, found it in my son's bedroom, which is now a guest room.  We have a computer in there and evidently, I went in there to check something out with book in hand.  I left without it and forgot completely about taking if from its designated spot. The next time, I misplaced this book, I found it in our den.  I had gone to chat with hubby, again, book in hand and put it down.  Once again, I walked away without Donna's hard work and also found it a few days later. Meatball Vegetable Soup

My husband has his moments when he is not subtle and today was one of them.  Emails and phone calls all mentioned that this is the season for soup, nice hot soup.  When he called before dinner and I told him, I was having leftovers, his comment was, "Have I told you how good soup is in this weather?"  Yes, he certainly had. What I did not tell him was that bubbling, on the stove, was a pot of rich delicious vegetable soup with spicy meatballs.  (not very spicy since that is not to his liking)  Needless to say, I had a happy husband enter the kitchen tonight. This is my magic soup.  Feel free to substitute your favorite veggies, add beans, quinoa, rice, sweet potato, you name it. I won Nigella Kitchen when it first came out and I was really excited about this particular prize. Nigella inspires me and this book inspires me even more. She has many helpful hints throughout the book and I find myself learning new techniques and better methods. The recipes appeal to me and I see how I go back to many of them, over and over again. Yanka's Ukrainian Meatball-Spinach Soup

I  did not expect to enjoy cooking from the Ukraine as much as I am.  I also made this soup with trepidation.  I first had to take into consideration the hot weather which is not soup weather.  Hubby and I had decided, other than cold soups, hot soups would wait until the Fall to be served in our house.  I have even taken a break from making the weekly Sabbath chicken soup. Secondly, meatball soups have never attracted me.  Meatballs in water ...... ugh.  How I did change my mind and hubby's response was, "Don't lose this recipe.  It is the best......" I had planned to have meatballs tonight and was amazed that hubby chose the same dinner.  He even offered to help make them. I thought he would just form pure meat-meatballs but no, he wanted a recipe.  I lined up three choices and this is the one he selected and this is a good one.  My jobs were to cut the parsley and prepare the ginger.  He did most everything else even to freezing the extra meatballs.  I like cooking this way. Spirals with a Quick and Simple Meat Sauce

Last night, I decided to try one of Hazan's meat dishes.  Why not start with his simple meat sauce?  There was a good reason not to.  It is much too simple, basically throwing together meat and onions and tomatoes.  Certainly, I have made better sauces, myself. I wanted to make something from Hazan, though, in keeping with the group's theme.  I looked up recipes from Hazan online and found this classic bolognese meat sauce which adds milk to the sauce.  Since, I can't use dairy milk, I subbed in Rice milk and made a sauce with some taste to it with added carrots, celery and onions, a little nutmeg and it used canned tomatoes instead of the fresh, he uses in this thirty minute book.  I ended up using both fresh and canned so I would have enough. Meatballs in Giada's Sauce

When I started blogging, I began to explore new taste sensations, new culinary treats, and as a result, did not make many of the old favorites, as often, in the past. Meatballs were almost dropped when we cut back on our meat intake.   One of my favorite dishes had been meatballs in many guises but good old Spaghetti and Meatballs led the pack.  Although, I would not call it a comfort food, it came close.  Pasta is always comforting and a tasty meatball only makes it better. I am emptying my freezer and one of the items in it is three packages of chopped turkey.  One of them is being eaten, tonight,  thanks to Giada.
