Nutty Rice

Rice became a major player in our home when my husband was diagnosed with celiac.  Fortunately hubby loves rice and would be happy, having it daily.  I would not.  At the beginning, I made every kind of rice, I could find in every way possible.


The problem is that I am lukewarm about rice.  I do like rice with lots of goodies mixed in so I usually try to add as much as possible.  Rice Camouflage……  I found this recipe in Southern Living and it sounded like it would fit the bill.

Years ago, we shifted from white rice to brown rice for the health benefits.  White rice is brown rice that has had essential nutrients removed when processed in order to make it easier and faster to cook, and to give it a longer shelf life. This is accomplished by removing the bran, and with it, minerals and vitamins that are necessary in our diet.

At first, I thought I was going to rebel against brown rice, despite its value but I found the nutty taste to be a lot more interesting and enjoyable than white rice which is bland, in comparison.  You will find that most of my recipes are made of brown rice.  I have discovered many types of rice, along this journey.  I have red rice, black rice, arborio, Texmati, etc.  When, I see a new rice, I usually buy some.

Nutty rice is a good dish.

Nutty Wild Rice

Nutty Wild Rice  (adapted from Southern Living)

Ingredients:

2 cups wild rice
1 cup raisins
4 scallions, chopped
1/3 cup orange juice (juice of one orange)
2 tablespoons olive oil

1/8 teaspoon black pepper
1 cup pecan halves, toasted

Method:

Preheat oven to 350 degrees. 
                               
Prepare rice according to package directions, using vegetable broth, in place of the water.  You will find that this adds tons of flavor.

Add raisins and next 4ingredients.

Place this into a casserole and add nuts, heating thoroughly for 15 minutes.

The beauty of this dish is that you can add grated carrot, chopped apples or pears, dried fruit, mangoes, peaches, apricots or any of the squashes.  Coconut or other kinds of nuts (walnuts, almonds, cashews) make a nice addition.  Use this as a base for creativity.
