Bake with Bizzy 2 (Almond-Blueberry-Cranberry Cake - Nigella)

My Friday baking is upon me and I have been flipping through cookbooks.  One of the most fascinating books, I have is the Pillsbury (10 year) Bake-Off from 1959.  I rarely look at it because I thought it would be out of date and use lots of mixes.  Of course, silly me just realized, in 1959, there were probably no mixes and using Pillsbury flour is about the closest they can get to use their products.  As a result, there are fabulous recipe, in the book.

I checked out a few other books and nothing appealed.  I don't think it has much to do with appeal.  I want something simple because I am tired.  I have been cooking all morning and I have run out of steam.  I ended up baking a Nigella recipe and Nigella rarely fails.  I have not taken photos yet but hopefully, I can add them later.


Almond-Blueberry-Cranberry Cake      (adapted from Nigella Lawson’s Domestic Goddess)

  Ingredients: 

1 cup mixture of frozen blueberries and dried cranberries 
 1 2/3 cups gluten free flour   
1 cup canola oil   
1/2 cup plus 1 tablespoon sugar 
 3 large eggs, beaten 
2-3 drops almond extract   
1/2 teaspoon rum extract 
 1/2 cup ground almonds 
 1/2 cup slivered almonds   
6 tablespoons almond Rice Dream 
 2/3 cup additional slivered almonds 



 Method: 

Preheat oven to 325 degrees F. 
Wash the berries  in a colander under cold water, then pat them dry, toss them in some flour, and shake well to get rid of excess.  
Mix oil and sugar until well combined. 
Gradually add the beaten eggs and almond extract, and rum extract and. then gently fold in the remaining flour and ground almonds.  
Fold in the berries and 1/2 cup almond slivers, then the rice milk and spoon the thick mixture into a 9 X 5-inch loaf pan, lined and sprayed with cooking oil. 
Place remaining slivered almonds on top of cake.  
Bake for 45 minutes to 1 hour at 325 F, or until a toothpick comes out clean. Makes 8 to 10 thick slices.  

I am delighted with the recipes that came in, last week.  They would keep me busy for about half a year, baking and eating.  I decided, I would like purpose as to which recipes would be featured. If possible, I would like to feature a  pie, a cake and cookies.  I can always add a fourth for another category. This will keep me focused.
