Apple Stuffed Sweet Potatoes

Here it is Friday again, a day I consider my creativity day.  I don't have an artistic eye, draw pretty bad stick figures, and can't decorate.  The only place to be creative other than in my teaching (I am quite creative there.) is in my cooking.  This is the day, I know I am committed to baking and cooking and when I awake, it is with excitement about what I am throwing together.

Usually on Thursday evenings, I check the cupboards and refrigerator to see what I have that should be used.  Then, I go online, looking for new ideas.  When I am done, I start mixing and matching recipes and ingredients.  Friday morning is the time to put my dishes into practice by making them.

Let me be clear, I am not looking for weird or different.  I am looking for delicious.  Would this spice enhance the rice?  Does some orange juice make it zingier?  What would happen with crumbs on the top?

Today, so far, I decided on these sweet potatoes, stuffed with a mixture of the sweet potato, apple, orange juice and spices.  I am still debating whether I should add some nuts or dry fruit.  I also made cabbage cakes.  These pancakes are delicious and so far no one who has tasted them has discerned the cabbage in them.  If you are not  a cabbage lover, you just might like these.  Next time, I think I would like to add some shredded potato to the mixture for a completely different texture.

I also made a new gluten-free flour mix and made cherry - almond muffins with it .  My salmon is Cajun.  Chicken, dessert and salads are still to be done.  I am not sure what I will do with these.  By the way, I am open to suggestions so please do share.

Apple Stuffed Sweet Potatoes

Ingredients:

3 medium sweet potatoes
2 eating apples, chopped
1 teaspoon lemon juice
1 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
2 tablespoons of fresh orange juice
2 tablespoons brown sugar


Method:


Preheat oven to 400 degrees.  Bake sweet potatoes for one hour.
While they are cooking, prepare the apples in a small bowl by adding lemon juice, orange juice, brown sugar and spices to apples.
Mix them together so that the apples are coated.
Cook the apples in a microwave.  Depending on the power of your microwave, cook for 1 to 2 minutes.
When sweet potatoes are cooked, cut them in half.  Remove most of the sweet potato meat and mix it with the apple mixture.
Stuff this mixture into the sweet potato skins.
Either spray with cooking oil or put dabs of butter or margarine on top and bake for 7 minutes.




Enjoy every bite.
