My Love Affair with Mangoes

When, I discover a new food, I like, I make it over and over again.  This year, I mangoes came into my life and it has appeared in a variety of recipes.  It seems to me, mangoes go with almost anything.  They balance out savory recipes, they fit into sweet ones.  The give new meaning to salads and poultry.  

Mangoes are stone fruit, grown on trees.  India is the biggest producer of this lovely fruit.  Ripe mangoes are typically eaten fresh and can be used in many recipes, in a variety of ways.

The first time I used Mango was in a drink, Mango Lassi, which is created by mixing ripe mangoes with yogurt and sugar.  It turned out to be quite a treat.

This time, I found a new site, Fresh Mangos.com.  Here, you will find a brief history of the mango, health benefits of the mango and how to eat a mango, just for starters.  This is followed by recipes using the fruit.




Mango Chicken

Servings 6
Ingredients:

14 cup Canola oil

1/4 cup soy sauce

1/4 cup white wine

1/2 cup green pepper, diced

1 cup mango slices

3 chicken cutlets, cut into 2 inch pieces


Method:

In oil, brown chicken on all sides. Place in baking dish. Season with soy sauce, wine, salt and peppers. Cover and bake at 350 degrees F until almost tender, about 12 minutes. Add mangoes and bake 10 minutes longer.

  5. This looks awesome, the only change I'd make to the recipe is to use olive oil (canola is not good for us), and only fermented soy sauce (unfermented soy is another one that is not good if you eat very much of it). :)

    Mango gives great flavor to everything, doesn't it?
