I found a number of recipes, I wanted to make but this one inspired me. I love that it has so few ingredients but shapes up to be a delicious chicken dish. I love that it is has ginger in it. I use more and more fresh ginger, these days.

Indonesian Ginger Chicken
The Barefoot Contessa Cookbook
Serves: 2 servings
Ingredients
- 1/2 cup honey
- ¼ plus 1 tablespoon soy sauce
- 1 teaspoon minced garlic
- 1 tablespoon peeled and grated fresh ginger root
- 2 chicken cutlets
Directions
Cook the honey, soy sauce, garlic, and ginger root in a small saucepan over low heat until the honey is melted. Arrange the chicken in 1 layer in a shallow baking pan, skin side down, and pour on the sauce. Cover the pan tightly with aluminum foil. Marinade overnight in the refrigerator.
Preheat the oven to 350 degrees F.
Place the baking pan in the oven and bake for 30 minutes.
Chaya, great chicken choice! I love the dark look of the sauce.
