Mile High Peanut Butter Brownie Pie

 The title sold me, before I even looked at the ingredients.  With a name like Mile High Peanut Butter Brownie Pie, it just had to be delicious.   It was also easy because this time, I copped out and use a ready-made pie shell and a box of brownie mix.  Of course, this is because I am so good and in preparing for Passover, I simply had to use this up.  I also finished off a jar of peanut butter.  I am good.

 

Mile High Peanut Butter Brownie Pie

 Ingredients

  • 1 pie shell
  • 1 box Brownie Mix
  • 1/4 cup Peanut Butter Chips
  • 1/3 cup Canola  Oil
  • 3 tablespoons water
  • 1egg
  • 1 package (8 oz.) Tofutti cream cheese, softened
  • 1/2 cup Creamy Peanut Butter
  • 1 cup powdered sugar
  • 1 container (8 oz.) frozen whipped topping, thawed=
  • 2 tablespoons  Mini Chips Semi-Sweet Chocolate

Directions

  1. In medium bowl, stir brownie mix, peanut butter chips, oil, water and egg 50 strokes with spoon. Pour batter into crust-lined pie plate.
  2.  Bake 30 to 40 minutes, covering edge of crust with strips of foil after 15 to 20 minutes, until crust is golden brown and center of brownie is set. Cool slightly, about 20 minutes. Refrigerate 1 hour or until completely cooled.
  3.  In medium bowl, beat cream cheese, peanut butter and powdered sugar with electric mixer on medium speed until smooth. Fold in whipped topping. Spread mixture over brownie. Sprinkle with chocolate chips. Refrigerate 30 minutes before serving. Store covered in refrigerator. 10 servings.

    Oh i love this! Looks amazing and so sinful. i can see myself eating the whole thing though which might be a problem. So impressed with how high it is!

    Bizzy, this really looks delicious. I love peanut butter and this would really hit the spot. You asked about using almond butter. If it has the same consistency and spreads like PB it should work. I'd toast the almonds though. Have a great evening. Blessings...Mary

It says, "thai" so I have to like the Thai Chicken San Choy Bau that we are making this week in our Donna Hay Wednesday group.  It was a bit spicy and the chopped chicken was a nice change of pace. Kayte selected this recipe from On the Shelf on page 124.   I tried it with the greens and it was very good and then I put it on spaghetti and it was spectacular.  My toddler granddaughter even liked it.  Must have been the hot sauce. I used romaine for the greens and I subbed in red pepper and added some Sirracha to spice it up to make up for the real chilis. Recipe Box - Week 2

Veggie Delight I had no name for this dish, I put together, this evening.  I am finding it difficult to follow recipes from cookbooks or online.  Almost always, I take the recipe, in another direction.  That is what happened, today.  I pulled out a few cookbooks, found a recipe for roasted cubes of vegetables in a tomato sauce and covered with cheese.  It had veggies, I had in the house and the idea of roasting vegetables with a cheese topping intrigued me. I ended up slicing the veggies thinly on the mandolin and separately putting piles of them, in a baking dish.  I then dropped some spicy cheese on top, well spaced out.  It was delicious. Recipe Box # 5 - Zucchini Alfredo - Lunch is Back

Last week, everyday was special. I had company on Monday and Tuesday and hubby was home Wednesday through Friday. There was no single lunch for me. It is a new week and a busy one but so far, I am here for lunch. Yesterday, I indulged again but since I am steadily losing weight, bit by bit, I am happy for the indulgences. The trade-off is chocolate for a more adventurous for lunch. Monday's lunch, looking back could have been made completely with zucchini noodles, skipping the brown rice pasta and it would have been a better dish but I was so, in the mood, for pasta. The sauce killed it anyway. Be prepared for some really healthy lunches and some over the top ones. One of my favorite dishes is an Alfredo which is why when I came across this recipe at allrecipes.com, I knew I was going to make it.
