Penne with Spinach and Ricotta QED

This is another wonderful recipe from Thirty Minute Pasta.  Hazan's recipes continue to be light and healthy and we are enjoying them.  I am glad, I purchased this book.  It is a good one for my cooking library, and I look forward, each week to picking out another recipe to make.

As you can see, I made a penne with spinach and ricotta, another easy recipe that is not over-seasoned for my husband who  is into bland.  Of course, spices can be added to give it a punch.  The way it is now, it is a comfort food.

Ricotta is a favorite cheese and I found, I did not have any, when I went to cook this.  I used cottage cheese which does not come close and it was still really good.  Next time, I want to use the ricotta, which I love.

So far, all Hazan's recipes have been easy to fix and stayed to his thirty minute limitation.  Of course, he has little in the way of chopping which is usually what takes time in recipes.  These are more of the "throw it together" kind of recipe but with class.
