Creamy Cabbage and Noodles


Cabbage has been popular in my family for years. Even as a child, I remember cabbage, onions and noodles with some brown sugar and a good shake of black pepper.   For me, cabbage adds crunch and flavor to dishes which need something to shake them up.  I keep a bag of shredded cabbage on hand, most of the time.

 Cole slaw also was popular. It seemed, no matter where we went, there was cole slaw, potato salad and macaroni salad which is why, at least macaroni salad is not made often, in my kitchen.  Salads have changed dramatically over the years.  Sure, we still have variations of the tomato and lettuce salad but how many different kinds of lettuce or how many varieties of tomatoes, do we have?  I like using spinach with lettuce or in place of lettuce.

I remember the traditional macaroni salad with too much mayo and a few vegetables.  I certainly did not see spaghetti in a salad with soy sauce, sesame oil, peanuts and scallions.  

Fruits were not incorporated into our salads.  The first, I remember seeing is canned mandarin oranges in a tossed salad.  Then, there were the jello salads.  There was one that I adored.  Lime jello with cucumbers and onions and sour cream.  It was not like the more typical sweet jello molds.

Certainly, I do not remember smoked salmon included in any dishes other then bagels, lox and cream cheese.  Yes, cooking has changed and is continually changing.

I added smoked salmon to this dish. It is tasty without it but the pieces of salmon give it a spark. I admit, I add smoked salmon (lox) to many dishes because it transforms the dishes. Such an easy way to improve on the flavor of food.  I wish my Mom knew about this.


Creamy Cabbage and Noodles

1/2 pound medium noodles Gluten-free

1 tablespoon olive oil

1 medium onion, chopped

1 bag of shredded cabbage

2 slices of smoked salmon

salt and pepper to taste

1 cup plain yogurt


Method:

Cook noodles according to package directions.

Cook onion and cabbage in olive oil for about 5 minutes. Onion should be lightly browned.

Add noodles & smoked salmon and mix into vegetables.

Add yogurt and mix until integrated.

Season and cook until heated through.

Eat and enjoy.  Serve with a big tossed salad.

  2. I love cabbages and frequently used it for our Chinese stir-fry noodles too. Your creamy cabbage with noodles looks really delicious, and the addition of smoked salmon sounds really good!
