Chocolate Chip Pancakes


My grandchildren were over and it was breakfast time.  I decided, we would have fun and make something together.  Grandchildren open new doors.  They are not simply children of children.

Our love for them and theirs for us is more overt, even than our children, because we do not live with them so a good dose of obvious love is out there, whenever we get together.

Planning activities with them is fun and simple.  It does not have to be a big deal but sometimes it is.  My husband loves to take them on walks.  There is something about those walks that opens up many doors.  I remember walking with one of my granddaughters and learning the times tables.  We have such fond memories of multiplication.  Weird but wonderful.

I had three daughters to cook with. Cooking brings out their strengths and interests.  The youngest who wanted to be part of this lost interest, part of the way through, while the two older took over.  All of a sudden, I saw them pouring through cookbooks looking for the best recipe, lining up ingredients and bowls.  

When I got involved again, it was mixing time and one of them did that.  I realized, my job was to put food in the oven or in this case, in the skillet and to stand in awe as my little granddaughters grew up, in front of me.

The first item on the agenda was our breakfast which you can see turned out to be chocolate chip pancakes.  The idea of chocolate chips in pancakes was not one that I was thrilled with but I have to admit now, I simply love them.

They found this recipe in the book below and blueberries could be used in place of the chips.  Children pick chips. The adults would have selected the blueberries.


Fluffy Pancakes   From Kosher by Design Kids in the Kitchen.

Ingredients:

1 3/4 
cups gluten-free  flour

3 1/2 tsp baking powder
1 teaspoon salt
2 tablespoons sugar
1 1/2 cups milk or ( soy milk almond milk, coconut milk, Rice Dream)
2 large eggs
1/2 cup choc chips
spray cooking oil

Method:

Pour flour, baking powder, salt, and sugar into a bowl and mix.

Add the milk.

Add the eggs.



Mix until mostly smooth, leaving some lumps.

Spray skillet with cooking oil.

Scoop out batter into the frying pan, depending on how big you want the pancake to be.

When one side is golden brown, flip the pancake.

Remove from skillet.  Drain on paper towels.

Transfer to serving dish.

Eat and enjoy.  Although, one of the girls tried out maple syrup, we all agreed, there was no need for it.  The chocolate served the purpose.  After one pancake with syrup, she did not use it again.

  6. I have such lovely memories of my grandparents. You are right, Chaya, you don't have to do things that are complicated, the simplest of things can make wonderful memories. My son still talks about the walks he'd take with my late Dad. What a lovely treat to share with your grandchildren too - your Chocolate Chip pancakes look scrumptious!
