Crustless Spinach-Cauliflower Quiche

                                                

    Crustless Spinach-Cauliflower Quiche

    Ingredients:

    3 ounces whipped cream cheese, at room temperature
                                                             1 cup  milk                                                                                                                                          4  eggs                                                                                                                                        1/4 teaspoon pepper                                                                                                           3 cups shredded Mexican cheese                                                                 4 cups frozen chopped spinach, thawed and squeezed dry                                                          2 cups frozen cauliflower, thawed and drained                                                                                   1 large onion, finely choppedMethod:
    In a small bowl, beat cream cheese. 
    Add the milk, egg substitute and pepper; beat until smooth. 
    Stir in remaining ingredients.
    Transfer to a 10-inch pie plate, coated with cooking spray. 
    Bake at 350° for 45-50 minutes or until a knife inserted near the                           enter comes out clean. 

    Eat and enjoy.
