Blueberry Sour Cream Cake



I wanted to make this, last week, but I had no sour cream so I made up for it by making it, this week.  There certainly is no problem finding good blueberry recipes but this site is filled with a bunch of winners.  It is called Blueberry Recipe. com.  They even discuss growing blueberries and recipes for kids.  It is worth a look if you like blueberries.

Blueberry Sour Cream Cake  (adapted)

Ingredients:

1/2 cup oil minus 1 tablespoon
1 cup sugar
3 eggs
2 cups gluten-freeflour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 cup sour cream
1 teaspoon vanilla
2 cups blueberries, fresh or frozen
1/2 cup brown sugar


Method:

Preheat oven to 325 degrees. Grease and flour 9x13x2 inch pan. 


Put oil and sugar into mixing bowl.

Add eggs, one at a time, beating well after each addition. 

Mix dry ingredients and add gradually to the egg mixture alternately with sour cream, ending with flour.

Stir in vanilla .

Pour half the batter into the pan. 

Cover with half of the blueberries.

Add remaining batter and cover with remaining berries and sprinkle with brown sugar. 

Bake 45-50 minutes. Cool in pan for 15 minutes. Remove to wire rack to cool completely.

Eat and enjoy.

  1. There is something about sour cream that makes everything rich and delicious. This is a nice basic recipe that can be whipped up quickly and makes a good presentation. I love anything blueberry especially when they are baked and become plump and moist.
