Cheesy Pasta and Spinach
I mentioned that I was going to make decent lunches since hubby is around the house on most days. I am happy to share that we have been eating a variety of meals and that makes eating lunch a lot more pleasant. Today's was especially good. Although, I still thoroughly enjoy pasta in tomato sauce my taste seems to be shifting to white pizza and white pasta sauce. The cheese and spinach combination was a treat and I liked it better than if any tomato had been included.
I loved how cheesy it was but I think the amount of cheese can be cut back. One cup of mozzarella would probably suffice.
Cheesy Pasta and Spinach
Ingredients:
10 ounces frozen or fresh chopped spinach
1 egg
1/2 cup sour cream
1/4 cup milk
2 tablespoons Parmesan plus another 2 tablespoons Parmesan
1/4 teaspoon ground black pepper
1/2 teaspoon onion powder
2 cups Mozzarella cheese, divided into one cup measures
8 ounces quinoa spaghetti, cooked and drained
2 cups Mozzarella cheese, divided into one cup measures
8 ounces quinoa spaghetti, cooked and drained
Method:
Preheat oven to 350 degrees F.
Cook spinach in water in microwave. Squeeze spinach in a cloth or with hands to get it as dry as possible. I use a clean dish towel and it seems to be the most efficient way to accomplish this.
Combine egg, sour cream, milk, 2 tablespoons of Parmesan cheese, onion powder, black pepper, spinach and 1 cup of Mozzarella cheese in a large bowl.
Add spaghetti, mixing well to coat.
Pour mixture in a baking dish that has been sprayed with nonstick cooking spray.
Top with remaining Parmesan and Mozzarella and bake for 30 minutes, until cheese is melted and top is lightly browned. Cover after 15 minutes if the cheese starts to get dark.
Eat and enjoy.
