Eggland’s Best "Your Best Recipe" Contest - Grand Prize $10,000!

Eggland's Best is looking for the best, most delicious recipes from your kitchens that celebrate Eggland's Best eggs. Whether it's your tasty quiche recipe, your melt-in-your-mouth cookies, or the dinner your family asks you to make over and over again, EB wants to know - what is "Your Best Recipe" using Eggland's Best eggs.

You may enter up to 2 recipes in each of the following 4 categories:
Breakfast
Appetizer
Main Course
Dessert

One winner will be selected from each category and will be awarded $1000!

One Grand Prize winner will be selected among those 4 winners for a prize of $10,000!

All recipes must be original recipes, and include at least 2 Eggland's Best eggs.

Recipes will be judged by a panel of culinary and nutrition experts led by Chef Candice Kumai, and Registered Dietitian Elizabeth Ward, and YOU! That's right! The best 5 recipes from each category will be displayed on the Eggland's Best website for our Semi-Finalist Voting Round in September. Votes from our Semi-Finalist round will be calculated as part of the total score of each recipe.
Contest Details & Rules:
Contest entry period begins Monday, May 7, 2012.
Contest entry deadline is Sunday, August 12, 2012.
Entrants may submit up to two recipes in each of the 4 categories (eight total recipes per entrant).
Online voting period will take place from Thursday, September 20, 2012 through Sunday, September 30, 2012.
All recipes must be original.
All recipes must include a minimum of 2 Eggland's Best eggs.
Recipes must be entered through our official online entry form. Entries submitted through email will not be considered for official entry. Click here to access the online entry form.
Winners will be announced on November 12, 2012.
All semi-finalists must meet eligibility requirements.

Thai Chicken San Choy Bau

It says, "thai" so I have to like the Thai Chicken San Choy Bau that we are making this week in our Donna Hay Wednesday group.  It was a bit spicy and the chopped chicken was a nice change of pace. Kayte selected this recipe from On the Shelf on page 124.   I tried it with the greens and it was very good and then I put it on spaghetti and it was spectacular.  My toddler granddaughter even liked it.  Must have been the hot sauce. I used romaine for the greens and I subbed in red pepper and added some Sirracha to spice it up to make up for the real chilis. Another week, another vegetable for our Power Food group, a bunch of women who strive for healthy eating with the most delicious dishes. Each blog is inspiration . Each week, we choose a recipe based on the power food which comes from the book, Power Foods, 150 delicious recipes with the 38 healthiest ingredients from the editors of Whole Living magazine. That week, we concentrated on carrots. I like to check out our vegetable, not only for health benefits, but also for the names of their sisters. Carrots are related to parsnips, fennel, parsley, anise, caraway, cumin and dill. I didn't have a clue about many of these. I, have never seen carrots of other colors or at least, if I had, I didn't know, they were carrots. I am going to a good produce store, looking for purple or red carrots, to start my search.
