Sweet Potato Kugelettes - Muffin Style
Sweet Potato Kugelettes
3 large sweet potatoes, peeled and boiled until soft
1/4 cup olive oil
1 teaspoon cinnamon
1/3 cup brown rice flour
2 teaspoons lime juice
Preheat oven to 350 degrees F. Prepare muffin tins by putting liners into tins.
Mash the sweet potatoes until smooth.
Pour into muffin cups.
Bake at 350 degrees for 40 minutes.
I suggest a streusel topping. Since, we have not eaten these yet, I plan to make the topping with nuts, gluten-free flour, cinnamon and a little sugar.
