Caramelized Onion Mashed Potatoes







The Joy of Kosher site is a source of a plethora of recipes for the holidays as well as the weekdays.  While it is a kosher site, these recipes can be enjoyed by everyone.  Actually, when I visit the site, I get lost in it.  There is so much going on, including the recipes, that I hop around from one thing to another.  I, usually end up with the recipes and this time, I came across these caramelized onion mashed potatoes.


Two of my favorite foods, mashed potatoes and caramelized onions.  My guess is that these two are favorites for many of you.  I will go as far as saying, many of you probably consider this, a comfort food.  I certainly do.


Caramelized Onion Mashed Potatoes (Adapted)

Ingredients:

2 pounds Yukon gold potatoes, cut into 1/2-inch dice (I got the nicest Yukon Gold potatoes at Costco.)
3 tablespoons olive oil, divided
2 medium onions, diced
1/4 teaspoon kosher salt
1/4 cup chicken soup
1/4 teaspoon garlic powder

1 teaspoon onion powder

Method:

In a large pot, cover potatoes with water and bring to a boil. Simmer for 18 to 20 minutes or until tender when pierced with a fork.  Remove from pot and drain in a colander.

While potatoes are cooking, heat 1 tablespoon olive oil in a medium sauté pan over medium heat. Add onions and 1 teaspoon salt and sauté for 10 to 12 minutes or until softened and browned, stirring constantly.

Mash potatoes until slightly bumpy.  Add onions and mix into mashed potatoes.
Stir in broth, garlic powder, remaining 2 tablespoons olive oil, and ¼ teaspoon salt.

Serve immediately or cover to keep warm.
