Chocolate Ganache Mini Bundts - Ina's Garden


We decided to have a Wild Card for this week's Ina Garden.  Since my granddaughter will be celebrating her birthday, at our home, I decided to make mini bundts.  She is only turning one so small cakes sounds appropriate.  I have decorated each of them differently.
Since I had the Marshmallow Fluff out for brownies, I was making, I decided to use that with the chocolate ganache to make it even more festive.  I had fun with different sprinkles and designs.

Chocolate Ganache Mini Bundts  (adapted)


Ingredients:


  • 7 1/2 ounces oil, at room temperature
  • 1 cup sugar
  • 4 extra-large eggs, at room temperature
  • 16 fluid ounces chocolate syrup 
  • 1 tablespoon pure vanilla extract
  • 1 cup all purpose flour

For the ganache:

  • 1/2 cup heavy cream
  • 8 ounces good chocolate chips  (Semi-sweet)
  • 1 teaspoon instant coffee granules

Method:


 Preheat the oven to 325 degrees F.

Mix the oil and sugar with an electric mixer.

Add the eggs, 1 at a time. Mix in the chocolate syrup and vanilla.

Add the flour and mix until just combined. Don't overbeat, or the cupcakes will be tough.

In a small saucepan, cook chocolate and cream on low heat until chocolate is melted.  Keep mixing until smooth.  Add coffee granules and continue to mix until they have disappeared.

This was so easy.

  7. Oh those bundts looks amazing and so rich and delicious with the ganache! Wow, my mouth is open and i am drooling. So wish I was eating a big piece of it right now. who cares if it is 6:50 am! LOL!
