CHICKEN SOUP: (Kuracia polievka)

Chicken soup is a common soup, in our home.  I make it, in several ways, one being better than the next.  We have a family issue on chicken soup.  My youngest likes clear soup with large chunks of vegetables, like this one.  That is the soup, I used to make weekly, for years, until I started blogging.  Blogging brings out the daring part of me and the desire to try new recipes and new ideas.  As a result, chicken soup has become everything but the traditional soup that grandmother's (bubbie's) makes.  I found this on Zlamushka's Spicy Kitchen, a good place to check out.

CHICKEN SOUP - (Kuracia polievka)


Ingredients:
  • 2 pieces of chicken
  • 2 carrots, chunked
  • 1 parsnip, sliced
  • 1stalk celery, chunked
  • 1 onion, cut in four pieces
  • 1 bunch fresh parsley
  • salt
  • black pepper

Directions:

In a large pot, bring water to boil.  I fill a six quart saucepan about 3/4 full.

Add chicken and vegetables to water.  Tie parsley together and add this with other vegetables.

Cook for two hours, covered.

Remove the chicken and break up into smaller pieces.  Return chicken to pot.

Remove parsley.

Add salt and pepper.

Skim fat off soup, when cool.

Reheat and ladle into bowls.  Top with some chopped parsley.

I had questions about putting the vegetables in at the same time as the chicken but for some magical reason, they stayed firm and delicious to the taste.  The one item, I missed and will add, in the future, is a sweet potato.  I usually chunk one up and it brings a subtle sweet taste to the soup.  The carrots do this also but the sweet potato is more potent.

This soup sets the scene for an evening in front of a fireplace (if we had one) cuddling and enjoying the warmth of being inside in the cold of winter.

  1. Ha ha , my sibling and mommy ,both love clear chicken soup with a few add in's , and if adding capsicum or basil ,(i know so many ways to make the famous chicken soup no), sibl likes it last , so that it retains a good crunch , while mommy softer , i manage it all right!
    Ur soup looks hearty and really good!
    What was the soup ur bubbie made ? (did i get that right?)
    We have a v traditional canja de galinha that we call grandmoms soup :-)lol!
