Chock Full of Goodness Muffins
We love muffins both mini and regular sized and even super-sized on the rare occasions, we are very hungry. Muffins are a cause for creativity. Think about these:

Breakfast Muffins
Ingredients:
2 cups mashed potatoes
1/2 cup vegetable broth
1/2 cup vegetable broth
2 Tablespoons oil
1 onion chopped

5 slices sun dried tomatoes
2/3 cup flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2/3 cup milk
Directions:
Preheat oven to 400.
Spray 12-cup muffin tin with non-stick oil.
Boil potatoes until mashable (not mushy)
Add cream cheese and 1/4 cup vegetable broth

Cook onions in oil in a hot skillet until lightly browned.
Add sun-dried tomatoes and heat for additional two minutes.

In separate bowl mix together flour, baking powder, baking soda, salt, milk, and eggs .
Combine potato mixture with flour mixture and pour mix evenly into each cup.

Top potatoes with 1 Tablespoon cheese and 1 Tablespoon *tomato.
Bake at 400 for 30 minutes until golden brown.
Topping: Put tomatoes in small bowl and place in microwave. Cook at high for two minutes. Remove from microwave. Take a fork and chop the tomato so you have smaller pieces. Place tomatoes on top of muffins. Shred cheddar cheese directly over tomatoes.
I made six of these with the tomato and cheese on top and another six with Parmesan, sprinkled from bottle on top of potatoes.
