Spinach Mozzarella Muffins - Health and Flax Seeds

 I found this as a draft.  It may be that I already blogged this but if so, I don't know why it is sitting here.  These muffins were very nice.  They are not muffin consistency.  They are a light vegetable consistency.  They, obviously are faux muffins, and make a great side dish.  I turn many vegetables, meats, and eggs into muffin shaped dishes.  It is fun to get a plate with a main course, a salad and a vegetable muffin.




I started making Saucy Mozzarella Patties and made the wise decision not to make something fried.  I turned the recipe completely around, making spinach the star and making muffins instead of patties.  They make a nice side dish.


Spinach Mozzarella Muffins

Ingredients:

2 cups frozen spinach, water squeezed out
1/2 cup flax seed flour
1/2 cup brown rice flour
1 egg
salt and pepper to taste
1 tablespoon olive oil
1 cup shredded mozzarella
1/2 teaspoon Italian spices
1/4 cup Parmesan
spray Olive oil

Method:

Preheat oven 350 degrees. Spray muffin tins.  (12)

Combine all ingredients except Parmesan.

Mix until well blended.

Place mixture into muffin cups and top with Parmesan.


Bake at 350 degrees for 25 - 30 minutes until muffins have puffed up and started to brown on top.
Eat and enjoy.
Note: I have been adding flax seed flour to many of my recipes.  It has a slightly nutty flavor so it goes with almost anything and it is healthy. 

  • Sprinkle ground flax seed on your cereal and salads.
  • Substitute flax seed mixture for eggs in home baking such as muffin and pancake (1 tbsp milled flax seed, plus 3 tbsp water = 1 egg). Final products will have less volume and taste gummier.
  • Include flax seed, whole or ground, in other recipes when nutty flavor is preferred
