Sicilian Potato and Egg Cake

I was about to make a Rachel Ray Potato Cake when I remembered, I had torn out from a Food Network Magazine, a recipe for a potato cake that looked more interesting.  Rachel's used sliced potatoes like a crust and the Food Network recipe used mashed potato.  I will always vote for mashed over sliced. This is the epitome of comfort food.   The mashed potatoes are creamy, the cheese adds zest and roasted red peppers were just right.  I am proud, I took only one generous slice.  Hubby ate the rest of the nine inch cake. My guess is children would like this even with the red peppers.  Next time, I would like to add caramelized onions to the cheese mixture.  I used smoked Mozzarella because I had it, in the house.  I had gotten it for my grandkids but they left a good share of the package behind.  It worked perfectly. Corn Flake Breaded Flounder Fillets

I have not made flounder or sole in actual years.  There is no real reason other than we love salmon and I gravitate toward it when I am fish shopping.  I broke the mold, so to speak, and bought some flounder and rediscovered the fish.  I made it with a simple corn flake crumb and Parmesan coating and served it with my spinach-cauliflower quiche and we had a wonderful dinner.  It was light but we walked away not feeling hungry. Corn Flake Breaded Flounder Fillets Ingredients: 4 flounder fillets 1 cup corn flake crumbs 1/3 cup Parmesan Cheese 1/8th teaspoon black pepper 1 egg beaten 2 tablespoons of milk Method: Place a piece of parchment paper on a cookie sheet. Mix egg and milk in a shallow bowl. In a plastic bag, mix corn flake crumbs, Parmesan and black pepper. Roasted Tomato Omelet - Donna Hay

****I have decided to move my Donna Hay posts here from My Sweet and Savory since I have put it to sleep.  I love my Donna recipes and want to share them with you.  There will be several new posts brought over and I do hope you make some of them.  Donna produces good recipes.*** This photo was blurry.  I worked with a photo program and it pulled the lines from the blurry area and they can now be seen.  If it is a bit sharp, that is the reason why, but now you can see that they egg is an egg. Yanka's Ukrainian Meatball-Spinach Soup

I  did not expect to enjoy cooking from the Ukraine as much as I am.  I also made this soup with trepidation.  I first had to take into consideration the hot weather which is not soup weather.  Hubby and I had decided, other than cold soups, hot soups would wait until the Fall to be served in our house.  I have even taken a break from making the weekly Sabbath chicken soup. Secondly, meatball soups have never attracted me.  Meatballs in water ...... ugh.  How I did change my mind and hubby's response was, "Don't lose this recipe.  It is the best......" This soup sang in your mouth.  I am not even sure what flavors were coming through.  They just blended into a wondrous concoction.  This would be a five star recipe. Vegetable Pad Thai

I love Pad Thai and I particularly love it with chicken but when I came across a vegetable version on Brownies for Dinner (sounds like my kind of place), I had to try it. It was really good and I would make it again. I used brown rice linguine which can be fussy and stick together if you don't baby sit it and I was doing three things at one time which means, I was not babysitting. I did my best to rescue it and did save more than half but I had my share of glopped together pasta, we could not eat.
