Bake with Bizzy - Sun Dried Tomato Mac and Goat Cheese

Mac and Cheese is the ultimate comfort food, in my opinion, so when Hubby asked for it, for dinner, I didn't blink twice before I said, "Sure."   When, I came across a recipe using goat cheese, I couldn't resist.  I made a number of changes in this recipe and frankly as creamy as this was proved I made good choices. Sun Dried Tomato Mac and Goat Cheese (adapted) 1 cup low-fat milk 3/4 pound small shell shaped pasta   2 tablespoons olive oil 1 1/2 tablespoons brown rice flour 1  cup grated Gouda cheese  1 heaping tablespoon cream cheese 4 ounces  goat cheese black pepper, to taste 1/4 cup cilantro, chopped  1 cup sun dried tomatoes, snipped 1/2 cup  potato chip crumbs Method: Preheat the oven  to 400 degrees F.  Bring a large pot of water to boil and cook pasta according to package directions, cutting off  2 minutes.   Drain and rinse, keeping 1/4 cup of pasta water. If you have read the previous post about Claire Robinson and her Pasta Carbonara, you already know how I came to making this recipe.  I served this as dessert tonight after the pasta.  It says that this tastes like a cheesecake but it is low fat and I agree with that statement.  This was light and delicious and I would gladly make it to serve as a cheesecake.  We enjoyed it.  I am thinking of different toppings to make for it.  The cherries worked well but blueberries or peaches sound great, as well. This is a QED (quick, easy, delicious) recipe.  It took no time to put together the cheese part and I let the cherries cook, while I was making dinner, only checking on it and mixing it, occasionally. I will be pinning featured recipes.  I am finally getting into Pinterest and I am having fun. I have always wanted to make a puffed apple pancake and I did just that.  I have fallen in love with apples and  missed all the signs.  Usually, we know when we are in love.  Maybe, we are a little silly or a little moody or maybe it is a dreamy quality.  We can't stop talking about "him" and go on and on with ridiculous details.  "He drove a car.   He played cards with Mom.  He picked up the baby.  What an amazing man!" Wonton Warrior is a little jealous of Eggbert the Egg Roll Wrapper.  It seems his recipe got more peeks than the warrior's.  Since Wonton Warrior was the first to challenge Bizzy for his blog,  he thinks he has privileges, just for him.  Puff Pastry Pal, Phyllo Phil (who we have not yet met), Patty Pie Crust (another new comer) and Eggbert just don't agree.  Bizzy for sure doesn't and is thinking about locking Wonton Warrior, out of this blog.   No!  I love making the wonton recipes.  We can't let this happen.  I know.  I will share a wonton recipe with you, to keep him happy and hope, he doesn't read this. I mentioned copycat recipes, yesterday.  Here is an old recipe, I made on Comfy Cook that we liked a lot.  Of course, Bizzy is going to select a cookie and why not that famous Neiman Marcus recipe. There is much conflicting discussion about this cookie but all I know is that it tastes good.  I am a big fan of brown sugar in chocolate chip cookies.  I think that the brown sugar puts the cookie over the top, that and all the chocolate inside.  Take a look.  .  Here is the recipe, I used,  although there are a variety out there.  This is on CD Kitchen Neiman Marcus  Cookie  - Copycat  The only change, I made, was to sub margarine for the butter. Bake with Bizzy - Pecan Muffins

I know it is not Muffin Mondays but I baked muffins and I want to share some thoughts.  Muffins leave the door open to a wide range of choices.  One of my favorite muffins has a spoonful of jelly inside of it.  I don't make chocolate chip muffins but it is a good idea.  I like fruit inside a muffin from fresh blueberries to dried pears.  My husband's favorite is a muffin with pecans. Of course, you can use vanilla extract but what about rum, strawberry or coconut.  Mix up the flavors and the filling and create your own brand of muffin. I made a basic muffin recipe which is found in almost every cookbook and Internet site.  The differences are small.  I use oil in my muffins.  Some of the recipes used butter.  Others use applesauce.   Since, I added 1/2 cup of pecans, I will label these Pecan muffins.  They were, of course, for the nut lover, in the family. This is the season of baking, cookies, cakes, pies and casseroles and vegetables and more, more more.  Let's see what we all have to share this week.  I am sharing a Double Pear Tea Bread.  I made this gluten-free. I had wanted to use recipes from The American Test Kitchen but for some reason, get called away and end up with something else.  Last nigh, I took out the book and placed it on my counter and decided, I was not going to do anything else, until I baked from it.  I have found all the recipes, in this book, are excellent and this was no exception.  Originally, this was a lemon tea bread with no fillers.  I had some pear juice and some dried pears so it changed its identity and had some cut up pears and walnuts added to the batter.
