Cinnamon Roll Quick Bread

The aroma of cinnamon fills the house and I am happy. What is it about cinnamon that is relaxing and dreamy? I want to sit in my kitchen, sniffing the air and have pleasant dreams about cinnamon buns or this cinnamon roll quick bread. I enjoy working in the kitchen but add on the warmth of brown sugar and/or cinnamon and the kitchen becomes a place for love and happiness. Cinnamon Roll Quick Bread  Ingredients: 2 cups gluten-free baking mixture 1 tablespoon baking powder 1/2 teaspoon salt 1/2 cup sugar 1 egg 1 cup coconut milk 1/3 cup Tofutti sour cream swirl 1/3 cup sugar 2 teaspoons cinnamon 2 tablespoons water icing 1/2 cup powdered sugar 2 tablespoons coconut milk  Method:  Preheat oven to 350 degree. It's time for another  Improv Challenge !   Apple kugels are a favorite in our home which meant, to me, I had to make one for the Improv Cooking Challenge which this month is featuring apple and cinnamon.  I must admit that apple and cinnamon are two ingredients that often are found together and it was easy not to push for creativity. When this kugel is so delicious, why go exotic? I can't wait to see how some of our creative members use their apple and cinnamon. Apple Cake

For Rosh Ha Shana, it is traditional to make honey cake.  So, what did I do.  I made a date cake and an apple cake.  This was supposed to be an upside down cake and I followed the directions except that I divided the batter into two smaller pans.  I am not sure if that is the reason, my apples rose to the top.  As a result, I did not turn mine but it does look very much like the original version. Maple Quinoa Muffins

   I was curious how these were going to come out and although they look slightly different they passed easily as good muffins.  How healthy can you get?  No butter!  No oil! No white sugar!  No white flour!  Maple Quinoa Muffins Ingredients: 2 1/2 cups quinoa, cooked and cooled 4 eggs, beaten 1/3 cup Rice milk 1/3 cup maple syrup 1 teaspoon vanilla extract 1 tablespoon cinnamon Method: Preheat the oven to 375ºF and place the quinoa in a large mixing bowl. Spray six muffin inserts in tin. In a small bowl, beat eggs together, Rice milk, vanilla extract, and cinnamon until combined. Add maple syrup. Add egg mixture to quinoa.  Pour into muffin tins. Cinnamon Pancakes

I love cinnamon, the fragrance, the taste and food that contains it.  These pancakes were a natural considering the yearning for more and more cinnamon. My husband usually turns down pancakes for breakfast and happily has his cereal.  He surprised me, this time, when he heartily agreed to pancakes.  I am, always happy, when we have pancakes so there were two enthusiastic participants, awaiting breakfast.  I debated adding apples to this recipe.  What are apples without cinnamon, what is cinnamon without apples.  Actually cinnamon is just fine without the apples so I stuck to what I expected to be a plain pancake. Actually, the cinnamon really enhanced the pancakes.  My husband ate them plain and I added a little syrup.  We both left the table, satisfied. Cinnamon sugar-coated maple apple cakes

Cinnamon Ripple Muffins

Cinnamon Ripple Muffins   (adapted from Family Fun magazine)  Ingredients: cinnamon ripple 1/2 cup packed light brown sugar 4 tablespoons oil 1/4 cup gluten-free flour 2 teaspoons cinnamon   muffin batter 2 cups flour 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1/2 cup oil 1/2 cup sugar 2 eggs 1/2 cup buttermilk 1 teaspoon vanilla extract Method: Combine all the cinnamon ripple ingredients in a mixing bowl and use an electric mixer to blend them. Set the mixture aside.  Preheat heat the oven to 400° F and put inserts into muffin cups. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.  In a large bowl, beat the butter and sugar with an electric mixer until the mixture is pale and fluffy, then beat in the eggs, buttermilk, and vanilla extract.  Stir in the dry ingredients just until the batter is blended.  Then sprinkle the cinnamon ripple over the batter and use a flexible spatula ...

Dessert Wontons compliments Wonton Warrior

 If you are also reading My Sweet and Savory, you are aware that Wonton Warrior has returned for a visit.  Gee, I hope, he doesn't plan to stay too long.  He is a difficult house guest..  The problem is that he likes to eat.......morning, noon and night and by night, I mean 2 AM. Being used to a quiet house, it is a bit shocking, to hear noises, after midnight.  The bang of pots and pans and the clatter of the flatware and dishes is not conducive to  sleeping and I find myself, joining Mr. Warrior, at the oddest hours.  I admit to being curious as to what he is up to. On one particular night, I rushed to the kitchen, after hearing something falling - only the spice shelf.  It could have been my glasses. This month, Kosher Connection is making desserts for Passover (Pesach).  I had planned to do this way before the holiday but had no time.  Here the deadline is due and my kitchen is not ready for Pesach but I have packed away all my baking and cooking wares.  My dilemma was how do I make this work. For those of you who don't prepare and celebrate this holiday, I am not sure, if you can understand the complexity of changing over one's kitchen. We literally pack up or shut down everything from the year and bring in different items, which we store from Pesach to Pesach.  I am fortunate, having an extra buffet that a relative gave us and I store myself there and do not go into that piece for the entire time between the annual holiday. I have already cleared out the cabinets, I will be using, and filled them with my Pesach pots and pans and gadgets, flatware, dishes, etc.  I purchased new spices and they are in place.  I got lots of potato star...

  There is this small cookbook called The Complete Yom Tov Cookbook which has a number of good recipes.  Yom means Day and Tov means Good.  Good day and for the Jewish people Yom Tov refers to a holiday.  The recipes, in this book are meant to be used in three of our major holidays. I was looking through it, since I hadn't used it, in a while.  Hubby wanted a cake, easy to cut and neat to eat.  The cinnamon cake sounded right to me.  I have mentioned before, hubby likes plain cakes, especially with nuts.  They are not necessarily exciting to make but they are usually easy to put together.  I lose some of the creativity while I do save time. Have you ever been surprised by a visitor?  Has a niece or nephew or grandchild ever stopped by, unexpectedly?  Your closest friend invites herself to dinner and you have no dessert. You have choices: Take time and go to the store and buy something - did I say buy?  We are foodies?  Are we allowed to buy?  Seriously, we are and we should realize that rather than beat ourselves down, doing more than possible in less time than needed, we must buy dessert or anything else, that is needed. Frantically, try to make a strawberry shortcake or chocolate mousse.  After all, if you are going to do, you want to do it right, no shortcuts, no mixes,-------complicated and fantastic but draining on you. Apple Kugel

I am a big fan of apples in baked goods but not only desserts.  I relish them in side dishes and while this kugel can be either a dessert or side, I usually serve it, as a side dish with chicken or meat.  I find that a sweet accompaniment adds a necessary component to a meal. I have made a dozen different apple kugels and like each and every one of them. This one is known as Malky's Apple Kugel .  I have no idea who Malky is but her kugel is a cinch to make and it tasted as good as the more complicated recipes. Muffin Monday

Somewhere online, I saw muffins called Cinnamon Toast Muffins and I thought, to myself, how delicious they must be.  Tonight, I opened  the Southern Cooking Bible by Paula Deen and looked up muffins, in the index, to find one muffin and this is it.  Honestly, I thought a book with this title would have corn muffins. Paula does quite a bit differently than I usually do when I bake muffins and some of that, I did not change.  What I did change, was the amounts of fat and sugar, in the recipe.   I, along with many of you, have been reading about Paula and her diabetes.  She is being called a hypocrite and worse.  Many of us like Paula and her recipes and many of us, automatically change almost any of her recipes.  Being the queen of butta is not something to be proud of, in my opinion.  With so much stress, these days on healthy eating, is a chef responsible for what she promotes. Apple Pie Wontons - Thanks Wonton Warrior

I love making wontons and trying all kinds of experiments with them.  This is not an experiment since there are many recipes for wontons with apples.  This one can be baked and it should have been baked.  I have company coming, any minute and I did not want to be in the middle of waiting for my oven to heat up.  Thus, I did something, I am not happy about, I deep fried them.  This is the recipe for baked.  If you want to fry them, heat up the oil (1 to 2 1 1/2 inches high) and drop them into HOT oil for less than a minute on each side.  When they are golden, take out with slotted spoon and place on paper towels. I found the second side needed only seconds to be done.  Watch carefully.
