Creamy Pumpkin Wontons

We tend to think of wontons as a savory wrap but it works as well with sweet fillings.  Since, I made chocolate wontons, I knew this was my secret weapon for interesting desserts.  Chop up some apples. Add a little sugar and use that as a filling.  Try a little marshmallow cream with a few chocolate chips.  Use your imagination and bring variety to the dessert table. Creamy Pumpkin Wontons Ingredients: 30 - 40 wontons 1 small can of pumpkin 3/4 cup of cream cheese 1 teaspoon of pumpkin pie spice hot oil about 1 1/2 inches deep in saucepan (large) Method: Heat the oil in a pot or deep frying pan. Lay out the wontons.  Put water around the edges of one wonton, at a time.  Put a small amount of cream cheese on the wonton. Top with a  small amount of pumpkin. Fold into a triangle and seal by pushing around the entire edge with your finger. Continue doing 3 or 4 of these. Drop a few at a time into the hot oil. Turn over after a minute or...

Dessert Wontons compliments Wonton Warrior

 If you are also reading My Sweet and Savory, you are aware that Wonton Warrior has returned for a visit.  Gee, I hope, he doesn't plan to stay too long.  He is a difficult house guest..  The problem is that he likes to eat.......morning, noon and night and by night, I mean 2 AM. Being used to a quiet house, it is a bit shocking, to hear noises, after midnight.  The bang of pots and pans and the clatter of the flatware and dishes is not conducive to  sleeping and I find myself, joining Mr. Warrior, at the oddest hours.  I admit to being curious as to what he is up to. On one particular night, I rushed to the kitchen, after hearing something falling - only the spice shelf.  It could have been my glasses. Wonton Warrior was looking for cinnamon and did something no one else has done, dislodged the shelf that holds sugar, spices, baking powder and baking soda.  You get the picture.  My counter was a mess. Chocolate Chip Wontons - compliments of Wonton Warrior

Wonton Warrior has been a busy person, dictating to us, what kind of wontons to make and what other tricks there are for the use of wontons.  For example, sprinkle with a  little cinnamon and sugar and bake and you have delicate cookies. When he said the word, chocolate, both Bizzy and I jumped for joy.  Chocolate can't be beat.  I found this recipe on Yummily and it has the most endearing name - Ridiculously Easy 4-Ingredient Chocolate Chip Wontons.  I made half the recipe and  should have made more. I served these at the family barbecue and the first reaction of people was "Chocolate in a wonton?"  That makes sense since, wontons are more often found in soup than as a dessert.  I made them with Tofutti cream cheese but I recommend that you use real cream cheese. Wonton Warrior is a little jealous of Eggbert the Egg Roll Wrapper.  It seems his recipe got more peeks than the warrior's.  Since Wonton Warrior was the first to challenge Bizzy for his blog,  he thinks he has privileges, just for him.  Puff Pastry Pal, Phyllo Phil (who we have not yet met), Patty Pie Crust (another new comer) and Eggbert just don't agree.  Bizzy for sure doesn't and is thinking about locking Wonton Warrior, out of this blog.   No!  I love making the wonton recipes.  We can't let this happen.  I know.  I will share a wonton recipe with you, to keep him happy and hope, he doesn't read this. Cinnamon Wonton Cookies

Have you ever been surprised by a visitor?  Has a niece or nephew or grandchild ever stopped by, unexpectedly?  Your closest friend invites herself to dinner and you have no dessert. You have choices: Take time and go to the store and buy something - did I say buy?  We are foodies?  Are we allowed to buy?  Seriously, we are and we should realize that rather than beat ourselves down, doing more than possible in less time than needed, we must buy dessert or anything else, that is needed. Frantically, try to make a strawberry shortcake or chocolate mousse.  After all, if you are going to do, you want to do it right, no shortcuts, no mixes,-------complicated and fantastic but draining on you. Deli Sandwich-Wonton Style

Yes, I did look up all kinds of recipes to keep Wonton Warrior happy but when it came down to making these, my "creativity" won.  Perhaps, it was my appetite that inspired me.  I had turkey pastrami in the refrigerator and pickles and mustard....the makings of a deli sandwich.  No bread, though so what was I going to do....make deli wontons.  Another thought..... You know how thick, those wonderful deli sandwiches are, too thick to bite into neatly.  Something is always falling out you take more than you should and you have a coleslaw mustache or perhaps one from the mustard or ketchup.  If the mustache should look like this, don't worry about it.  Keep it. Little Lasagna

Wonton Warrior is having a blast in Bizzy's kitchen.  I hope, he is not going to be angry at me for telling you, he is not the neatest cook.  I followed him around, wiping up spills, returning cheese to the refrigerator and washing dishes.  He is a bit lazy but he does know how to make magic with wontons.   After, making lasagna, he made chocolate cream cheese dessert --- oh so yummy. It was luck that I found an aluminum foil deep pan, the exact size of the wonton.  This is a pan, I must get a bunch of.  It made working with the wontons. a snap to use. Apple Pie Wontons - Thanks Wonton Warrior

I love making wontons and trying all kinds of experiments with them.  This is not an experiment since there are many recipes for wontons with apples.  This one can be baked and it should have been baked.  I have company coming, any minute and I did not want to be in the middle of waiting for my oven to heat up.  Thus, I did something, I am not happy about, I deep fried them.  This is the recipe for baked.  If you want to fry them, heat up the oil (1 to 2 1 1/2 inches high) and drop them into HOT oil for less than a minute on each side.  When they are golden, take out with slotted spoon and place on paper towels. I found the second side needed only seconds to be done.  Watch carefully. Wonton Warrior Misses YOU!

Wonton Warrior has been gone for too long and I know I miss him, very much. He misses us too. He told me so. I decided, it is time, I explored with all different combinations, to make wontons. I chose to start with this Sun Dried Tomato variety. It is no big deal to put together and it is even easier to cook. A disclaimer - I really don't like frying food. I did try to boil this first and frankly, it was a flop. The taste was fine although it was more like the soft ones, you get in a Chinese restaurant. I wanted a crispy wonton. I have learned to use enough oil to accomplish this. I used to barely put oil in the pan and it took forever to cook. In hot oil, it takes a minute or two. In fact, if you turn away for too long, it has probably gotten too dark. As you know, I have been having lots of fun experimenting with wontons.  Most of mine have been dessert wontons although, I have made dairy and fish also.  This one is meat - yes meat.  Cutting down on meat, does not mean, we are not having beef wontons. Baked Beef Wontons Crispy Beef Wontons   - Adapted from Taste of Home’s Fast Family Favorites Ingredients: 4-1/2 cups finely chopped cooked beef 3/4 cup shredded carrot 1 tablespoon cornstarch 1 tablespoon and 1-1/2 teaspoons water 1 tablespoon and 1-1/2 teaspoons soy sauce 1-1/2 teaspoons ground ginger 30 – 40 wonton wrappers 3 tablespoons margarine, melted 1 tablespoon and 1-1/2 teaspoons canola oil Plum or sweet-sour sauce Method:   In a bowl, combine chopped beef and carrot .
