Recipe Box # 22 - Sandy's Cheesy Spinach Eggs

 There has been so much tragedy in New York and New Jersey.  Last night, we found out that one of the schools was completely destroyed.  We have many friends who send their children to this school.  I started asking questions.  Where will these children go to school?  What does this do to a child?  A school is theirs and despite their not "liking" school, they really love it and are comfortable in it.  This is only one example of many organizations that was hurt badly.  So many people are going to have their lives turned upside down, when they go to put it together.  I feel such sadness as I write this.

I have come back to continue.  It seemed shallow to write about this breakfast which was joyous for us after thoughts of children who will have to deal with this.

This morning, the first  day with electricity, I made hubby and myself a delicious breakfast, nothing I could not have made, during the black-out but something that was so easy to do when one doesn't worry about getting matches to light burners.  I always jump away.  That flame just soars upward and it starts out much bigger than when it settles down.  This morning, all I had to do was get the necessary ingredients, no flashlight, no candle, no groping around.  I don't think, I am going to take anything for granted anymore.  It probably sounds silly to you but trust me, it was minor frustration.

This is my Cheesy Spinach Eggs which were appreciated more than any other eggs, we have eaten.  I know, it is not any better than any other eggs but it did taste better.

Sandy's Cheesy Spinach Eggs

Ingredients:

olive oil cooking spray
3 eggs
1 cup frozen spinach, defrosted
3/4 cup shredded Mexican cheese

Method:

Spray oil on a medium sized skillet
Beat the eggs.  Add a little milk, if you like.  Milk is still a luxury for us.
Heat pan and add spinach.  Spread it out so it covers most of the pan.
Pour beaten eggs over spinach and top with shredded cheese.
Leave till firm and turn over and cook for another minute or two until it browns a little.

Eat and enjoy.

I am sorry, I can't highlight any one's recipes.  I have not looked at them.  As much fun, as it would have been, the wash comes first.

  4. I'm glad to hear that you and your family were safe. We were without power for eight days after Hurricane Wilma hit us in 2005, so I know what it's like to appreciate the small things in life like making eggs. Please keep us up-to-date on how your community is recovering.

  5. You know Chaya - you can take some time off to recoop and just get your head and life back together. We would certainly understand! What you and others have been through as a result of Hurricane Sandy is very sad and have the hearts and thoughts of millions if not billions of people around the world.     Flushing toilets, running water, heat... things never to be taken for granted. We got our power back Sunday night. So sorry to hear about the school that is tragic... we had tragedy too in my town. I posted about it today. So glad you are safe and warm.

  10. I'm glad you all are safe. That's a horrible experience for so many of you and sad about the school. We were without power for 5 days last summer due to a storm. It was horrendous!

    It is sad to hear about the school. I'm glad that everyone is all safe there. We are having some floods in certain states in Malaysia too right now, where the people affected has been evacuated. Luckily it was not as bad and everything is under control. My area is not affected and am very thankful that we do not have any major disasters like other countries experienced.
