Cucumber Salsa for Lunch
Cucumber Salsa for Salmon or as a salad (adapted from Taste of Home)
1 cup finely chopped seeded peeled cucumber
1/2 cup finely chopped seeded tomato
1/4 cup chopped onion
1 tablespoons minced fresh parsley
1/4 cup red pepper, seeded and chopped
1/4 cup garlic dip
1 teaspoon lemon juice
1 teaspoon lime juice
1/8 teaspoon ground cumin
1/4 teaspoon seasoned salt (I used a citrus blend)
In a small bowl, combine the cucumber, tomato, onion, parsley and red pepper.
In another bowl, combine the sour cream, lemon juice, lime juice, cumin and seasoned salt.
Pour over cucumber mixture and toss gently to coat. Serve immediately with chips.
