Lemon-Tarragon Chicken with Squash Ribbons



This week's recipe was selected by Kayte and is called Lemon-Tarragon Chicken with Squash Ribbons.  I have been wanting to make zucchini ribbons for a while but you know how something can fall under the radar which this did.

It is so easy to do, I can't imagine why I waited.  I only used zucchini while the recipe called for both green and yellow squash,  Cooking for one means (to me) cutting back on some of the ingredients when it looks workable.  In this case, all I could see the yellow squash doing was adding color to the recipe which is nice but not a necessity.

It was a good dish, a little too lemony for me but easily edible.  I would make it again and change the flavor slightly.  This may not be a common citrus to use in such a recipe, but I think I would like orange.

  2. I have so much zucchini, both yellow and green. I've been making every zucchini dish I know over the past two weeks and we are going to have zucchini something this Shabbos as well since I still have 7 zucchini to use up. ! Believe it or not, I think I am going to make zucchini latkes as a side dish! Your zucchini ribbons look lovely.

  4. Those ribbons were such fun to learn about and make and they took no time at all to cook, a real time saver in my mind. Loved this recipe but you knew I would, right? All that lemon and tarragon and shallot combination, classic French cooking, I'm all about all of that! Yours looks good. I used some of my leftover chicken to make chicken salad and it is so good! :-)

  5. This will def be a catch-up dish. IT looks very tasty. I haven't made squash ribbons either even tho I have the time and have seen them often enough in recipes. Another first for us!!
