Zucchini and Potato Bake
There is nothing tastier than roasted vegetables. Use any seasonings you like and make them as spicy as you prefer.
Zucchini and Potato Bake
Ingredients :
1 medium zucchini, quartered and cut into large pieces
6 small red potatoes, halved
1 large onion, sliced thickly
1 medium red bell pepper, chopped
1/8 cup olive oil
1/4 teaspoon black pepper
1 teaspoon onion powder
pinch of cayenne
pinch of cayenne
Method:
Preheat oven to 400 degrees F .
In a medium baking pan, toss together the zucchini, potatoes, red bell pepper, onion and olive oil.
Season with onion powder, cayenne and black pepper.
Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly.
Eat and enjoy.
